Skillet Meatball-mushroom Stroganoff

Total Time: 55 mins Preparation Time: 30 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 2 lbs ground beef (shaped into small balls, use you favorite recipe)
  • 1 (10 ounce) can cream of mushroom soup, undiluted
  • 1 tablespoon worcestershire sauce (can use more to taste)
  • 1/3 cup beef broth or 1/3 cup consomme
  • 1 (3 ounce) package cream cheese (very soft)
  • 2 -3 teaspoons dijon mustard (or to taste)
  • 1/3-1/2 cup grated parmesan cheese (or to taste)
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder (i like to add it in) (optional)
  • 1 (10 ounce) can mushrooms, drained (or use fresh sauteed mushrooms)
  • salt (to taste)
  • 1/2 cup sour cream
  • 1 (8 ounce) package wide egg noodles, cooked

Recipe

  • 1 prepare the ground beef with your favorite meatball recipe, then shape into about 1 - 1-1/2-inch balls.
  • 2 brown the meatballs in a large skillet over medium heat; remove to a plate and set aside.
  • 3 drain any fat from skillet, or if you are adding in the onions and garlic then leave some fat in the skillet to saute.
  • 4 in a medium bowl mix together soup with worcestershire sauce, beef broth or consomme, cream cheese, dijon mustard, parmesan cheese, black pepper and garlic powder (if using) whisk vigorously until smooth and blended, then mix in canned drained mushrooms.
  • 5 add the sauce to the skillet; bring to a boil scraping up any browned bits in the bottom of the skillet.
  • 6 add in the browned meatballs back to to the skillet; stir to combine with sauce.
  • 7 simmer uncovered for about 30-35 minutes over low heat.
  • 8 season with salt to taste and more black pepper if desired.
  • 9 stir in the sour cream until blended and heated through (do not boil).
  • 10 serve the sauce with meatballs over cooked egg noodles.
  • 11 if desired sprinkle with more grated parmesan cheese.

Skillet Cornbread

  • 2 cups biscuit mix
  • 3/4 cup sugar
  • 1 cup yellow cornmeal
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butter (not margarine)
  • 1 cup half-and-half cream
  • 2 eggs, lightly beaten

Recipe

  • 1 mix the dry ingredients in a bowl.
  • 2 scald the butter and cream then add to the dry ingredients.
  • 3 mix in the eggs.
  • 4 grease and flour a 9 or 10 inch cast iron skillet.
  • 5 bake at 350°f for 30 minutes.

Skillet Macaroni And Cheese

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 2 cups uncooked elbow macaroni
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 tablespoons sweet onions, finely chopped
  • 1/4 teaspoon seasoning salt (or to taste)
  • 1/4 teaspoon pepper (or to taste)
  • 1/4 teaspoon ground nutmeg
  • 1 1/2 cups half-and-half cream
  • 3/4 lb velveeta cheese, cubed

Recipe

  • 1 cook macaroni, according to the package directions.
  • 2 meanwhile, in a large nonstick skillet, melt butter over medium heat.
  • 3 add onion and saute over low heat for about 2 minutes.
  • 4 stir in flour until smooth.
  • 5 stir in salt, pepper and nutmeg.
  • 6 gradually add cream; bring to a boil.
  • 7 cook and stir for 2 minutes or until thickened.
  • 8 reduce heat.
  • 9 stir in cheese until melted.

Skillet Macaroni Pizza

  • 1 lb lean ground beef
  • 1 (26 1/2 ounce) can italian sausage spaghetti sauce
  • 3 cups dry elbow macaroni
  • 2 cups shredded mozzarell cheese (divided)
  • 12 slices pepperoni (cut in 4ths and divided)

Recipe

  • 1 cook beef in large skillet (drain if needed).
  • 2 stir in 2-1/2 cups of water and sauce. bring to a boil. stir in macaroni.
  • 3 reduce heat to medium -- simmer for 10-12 minutes or until macaroni is tender.
  • 4 stir in half the cheese and pepperoni and tip with remaing cheese and pepperoni. let stan for 5 minutes.

Skillet Lasagna

  • 1 lb meatloaf mix
  • 8 curly lasagna noodles, broken into 2 inch pieces
  • 1 (26 ounce) jar marinara sauce
  • 2 cups water
  • 1 cup shredded italian cheese blend
  • 3/4 cup part-skim ricotta cheese

Recipe

  • 1 cook meat loaf mix in a large nonstick skillet over medium-high heat, stirring often to break up meat, 4 to 5 minutes, or until browned. drain off fat. stir in noodles, sauce and water; bring t a boil. cover; reduce heat and simmer, stirring often, 18 minutes or until noodles are tender.
  • 2 remove from heat; stir in 1/2 cup shredded cheese. spoon ricotta on top; add remaining shredded cheese. cover 3 minutes to melt cheese.

Skillet Franks 'n Noodles

Ingredients

  • Servings: 4
  • 1 lb frankfurter, cut in half diagonally (*see note)
  • 1/2 cup chopped onion
  • 1/2 teaspoon dried basil or 1/2 teaspoon dried oregano
  • 2 tablespoons butter or 2 tablespoons margarine
  • 1 (10 3/4 ounce) can cream of celery soup or 1 (10 3/4 ounce) can cream of mushroom soup
  • 1/2 cup milk
  • 1/2 cup chopped canned tomato, drained from the can
  • 2 cups cooked wide egg noodles
  • 1 tablespoon dried parsley

Recipe

  • 1 in a large skillet, melt the butter or margarine.
  • 2 add the franks, onion, basil or oregano, to the skillet.
  • 3 lightly brown the franks, and cook until onions are tender.
  • 4 add the soup, milk, and tomatoes; stir until well mixed and heated through.
  • 5 add the cooked noodles, and finish heating; stirring occasionally.
  • 6 sprinkle parsley on top just before serving.
  • 7 *note: you can substitute hot dogs for the franks in this recipe.

  • 1 lb italian sausage, casings removed
  • 1 (26 1/2 ounce) can hunt spaghetti sauce with meat
  • 6 ounces uncooked campanelle pasta, cooked according to package and kept warm
  • 8 ounces shredded mozzarella cheese, divided

Recipe

  • 1 cook sausage in a large skillet over medium-high heat until crumbled and no longer pink: drain.
  • 2 blend in spaghetti sauce- simmer for 5 minutes.
  • 3 remove from pan; keep warm.
  • 4 place half of cooked pasta in bottom of skillet.
  • 5 pour half of sausage-sauce mixture over pasta.
  • 6 sprinkle with 1 cup mozzarella cheese.
  • 7 top iwth remaining pasta, sausage-sauce mixture, and mozzarella.
  • 8 cover and cook over medium heat for 5 minutes or until heated through and cheese melts.
  • 9 remove from heat and let stand for 1 minute.

  • 3/4 cup flour
  • 3/4 cup cornmeal
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 1/4 cups buttermilk
  • 1 egg
  • 1/4 cup half-and-half cream
  • 2 tablespoons melted butter
  • 3 -4 minced green onions
  • 1/2 cup sour cream
  • 1 teaspoon cayenne
  • 1/2 cup chopped yellow onion
  • 1 cup corn (canned or frozen)
  • olive oil (for frying)

  • 1 saute, the 1/2 cup chopped yellow onions,add the 1 cup of corn and saute until transparent, sit aside.
  • 2 in a large bowl mix flour, cornmeal, baking powder, soda, salt and sugar together.

  • 1/2 tablespoon cooking oil
  • 1 1/2 cups of chopped onions
  • 1/2 cup of chopped bell pepper
  • 1 -2 jalapeno, chopped
  • 1 lb ground beef
  • 1 lb of raw breakfast sausage
  • 1 tablespoon of minced garlic
  • 2 1/2 tablespoons chili powder (to taste)
  • 1/2 teaspoon cumin
  • 1/4 teaspoon dried oregano
  • kosher salt and black pepper, to taste
  • 1 (14 1/2 ounce) can diced tomatoes
  • 1 (8 ounce) can tomato sauce
  • 1 (7 ounce) can green chilies
  • 2 cups water
  • 1 (15 1/2 ounce) can pinto beans (or red kidney beans, drained and rinsed)
  • 1 1/2 cups elbow macaroni (or shells)
  • 1 cup shredded cheddar cheese

Recipe

  • 1 heat the oil in a large lidded skillet over medium high heat; add the onion and peppers, and cook for about 4 minutes, or until vegetables are tender. to that, add the ground beef, sausage and garlic, breaking up the meat and cooking, until no longer pink. drain off any excess fat. stir in the chili powder, cumin, oregano and salt and pepper; taste and adjust seasonings.
  • 2 add the diced tomatoes, tomato sauce and green chilies; stir. add the water, beans, pasta and half of the cheese. bring to a boil, stir, cover and reduce heat to simmer. simmer for 20 minutes or until pasta is cooked through; uncover, stir and let simmer, uncovered, until reduced to desired consistency. sprinkle remaining cheese on top, cover and cook over low until cheese melts. garnish with sliced green onions, fresh diced tomatoes, sour cream or your other favorite chili toppings.

  • 2 (14 1/2 ounce) cans diced tomatoes
  • 1 (28 ounce) can crushed tomatoes
  • 1 cup diced red onion
  • 1 garlic clove, minced
  • 3 tablespoons fresh basil, chopped
  • 2 teaspoons italian seasoning
  • 1 tablespoon fresh oregano, chopped
  • 4 1/2 teaspoons sugar
  • 1/2 teaspoon crushed red pepper flakes
  • 1 (2 ounce) jar diced pimentos
  • 1 -2 cup italian sausage, cooked
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 15 ounces fat-free ricotta cheese
  • 1 -3 cup chopped spinach
  • 1/2 cup fresh parmesan cheese, shredded
  • 2 tablespoons kalamata olives, finely chopped (optional)
  • 1/2 teaspoon crushed red pepper flakes
  • 1/4 teaspoon sea salt
  • 2 tablespoons shredded part-skim mozzarella cheese

Recipe

  • 1 prepare marinara: cook italian sausage (optional) & set aside.
  • 2 saute onions in large saucepan or pot. do not brown.
  • 3 drain liquid from diced tomatoes & pour liquid into saucepan with onions.
  • 4 add basil, italian seasoning, oregano, sugar & red pepper.
  • 5 simmer 30 minutes or until reduced by half.
  • 6 add all sausage, tomatoes & pimentos, and cook 1 minute until just heated. remove from heat & set aside.
  • 7 prepare rolls: cook pasta according to package directions. drain, rinse, return to pot & cover w/ cold water.
  • 8 heat oil in nonstick skillet over medium heat.
  • 9 add garlic and cook 20 seconds. add spinach and cook, stirring often, 3 to 4 minutes. transfer to bowl.
  • 10 stir in 2 t mozzarella & 2 t fatfree mozarella, ricotta, parmesan, olives, crushed red pepper, salt and 2/3 c marinara into bowl with spinach mixture.
  • 11 spread 1 cup of marinara in bottom.
  • 12 lay out lasagna noodle on plastic cutting board. spread 1/4 c filling along length of noodle. roll up and place roll seam side down in large skillet. repeat with remaining noodles and filling (they will be tightly packed) spoon remaining marinara over rolls.
  • 13 cover skillet and bring to simmer over high heat. reduce & simmer 3-4 minutes.
  • 14 sprinkle with mozzarella and continue cooking, covered, until cheese is melted.
  • 15 cheese should be melted and rolls heated through.
  • 16 can be frozen up to 1 month.

Skillet Cornbread

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 10
  • 3 cups cornmeal, i use yellow
  • 2 1/4 cups flour
  • 3 teaspoons salt
  • 2 1/2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 4 tablespoons sugar, rounded
  • 3 eggs
  • 2 cups milk
  • 1/2 cup butter, melted
  • 1 tablespoon canola oil or 1 tablespoon olive oil, for the skillet

Recipe

  • 1 set your oven to 425°f and then add the tbsp of oil to your skillet. place the skillet in the oven while it comes to temperature.
  • 2 in the meantime, mix the cornmeal, flour, baking powder, baking soda, salt and sugar in a large bowl.
  • 3 in a separate bowl beat the eggs and then add the milk and the melted butter.
  • 4 add this into the dry ingredients and mix until blended, if needed you could add a touch more milk, but batter should be thick.
  • 5 go back to your stove wearing your oven mitts and take out the skillet, careful its hot, then swirl it around a little to coat the bottom of the entire pan with the oil. place on top of your stove and quickly pour your mixture into the skillet, you will hear it sizzle a little. place back into your oven and bake for about 20 minutes or until cornbread is nicely browned on top. you can do the cake test if you want with a toothpick also. serve right away with butter and honey, or jam. fyi - i use a 12 inch skillet for this recipe.

Skillet Italian Herbed Country Potatoes

Ingredients

  • Servings: 4
  • 2 cups potatoes, thinly sliced ( or red)
  • 1/2 cup onion, sliced (small onion)
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • 1 teaspoon rosemary, fresh, chopped
  • 1 teaspoon sage, fresh, chopped fine
  • 1 teaspoon thyme, fresh, chopped
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper, freshly ground (or to taste)

Recipe

  • 1 in a large non-stick skillet over medium heat, melt butter and olive oil together.
  • 2 add the remaining ingredients to the skillet. stir until potatoes are evenly coated with spice mixture and onion slices are evenly distributed.
  • 3 cook covered on medium heat for 15 minutes, tossing and turning the potatoes every few minutes.
  • 4 potatoes will be done when slightly browned and fork-tender.

Skillet Cookies

  • 1/2 cup margarine
  • 8 ounces pitted dates
  • 3/4 cup sugar
  • 2 tablespoons milk
  • 2 egg yolks
  • 2 teaspoons vanilla (or lemon extract)
  • 2 cups rice krispies
  • 1 cup pecans
  • 1 cup coconut, flaked

Recipe

  • 1 melt margarine slowly; add dates, sugar, milk and egg yolks.
  • 2 cook 10 minutes, stirring constantly, over low heat.
  • 3 remove from heat; add vanilla, rice krispies and pecans.
  • 4 mix well and shape into balls.
  • 5 roll in flaked coconut.

Raspberry Vinegar Ii

  • 6 1/2 cups fresh raspberries
  • 3/4 quart vinegar
  • 2/3 cup sugar

  • in a stockpot, combine the raspberries, vinegar and sugar and bring to a rolling boil, stirring constantly. remove from heat, cover and chill for one month.
  • remove vinegar mixture from refrigerator and strain through cheesecloth. bring the mixture to a boil in a large pot and simmer for 5 minutes. pour into sterilized jars. ready to use immediately.

Skillet Cream Corn

Skillet Jambalaya

Ingredients

  • Servings: 4
  • 1 lb extra-large shrimp, peeled and deveined
  • salt & fresh ground pepper
  • 1 tablespoon vegetable oil
  • 8 ounces andouille sausages, halved and sliced 1/4 inch thick
  • 1 onion, minced
  • 1 red bell pepper, cored and chopped fine
  • 1/2 teaspoon old bay seasoning
  • 1 1/2 cups instant rice (see note for long-grain rice)
  • 5 garlic cloves, minced
  • 1 tablespoon tomato paste
  • 1 3/4 cups low sodium chicken broth
  • 2 tablespoons fresh parsley, minced

Recipe

  • 1 season shrimp with salt and pepper and set aside.
  • 2 heat oil in 12-inch skillet over medium heat until shimmering. add andouille, onion, bell pepper, old bay, and 1/2 tsp salt and cook until onion is softened, about 5 minutes. stir in rice, garlic, and tomato paste and cook until fragrant, about 30 seconds.
  • 3 stir in broth and bring to simmer, scraping up browned bits. cover and cook over medium-low heat until liquid is absorbed, about 5 minutes.
  • 4 scatter shrimp over rice and continue to cook, covered, until rice is tender and shrimp are cooked through, about 5 minutes. off heat, let rice sit for 2 minutes. stir in parsley, season with salt and pepper to taste, and serve.
  • 5 note : if you don't have instant rice on hand or if you would like to use long-grain rice, follow this method :
  • 6 substitute 1 1/2 cups long-grain rice for instant rice and increase broth amount to 4 cups. extend rice cooking time in step 3 to about 20 minutes, then add shrimp and continue with recipe as directed.
  • 7 test kitchen tip for seasoning shrimp : to save time, we thought we'd skip seasoning our shrimp prior to cooking, but tasters noticed a difference. for the best-tasting shrimp, season the raw shrimp with salt and pepper and let sit for 10 minutes before cooking.

  • water
  • 1 tablespoon olive oil
  • 1 medium onion, minced
  • 1 red bell pepper, chopped
  • 1/2 teaspoon salt
  • 3 medium garlic cloves (about 1 tablespoon in a garlic press)
  • 1/8 teaspoon red pepper flakes
  • 1 lb italian sausage
  • 10 curly-edged lasagna noodles, broken into 2-inch lengths
  • 8 ounces tomato sauce
  • 1/2 cup plus grated parmesan cheese plus 2 tbsp grated parmesan cheese
  • ground black pepper
  • salt
  • 1 cup ricotta cheese
  • 3 tablespoons chopped fresh basil leaves

Recipe

  • 1 pour the tomatoes with their juices into a 1-quart liquid measuring cup.
  • 2 add water until the mixture measures 1 quart.
  • 3 heat the oil in a large nonstick skillet over medium heat until shimmering.
  • 4 add the onion, red bell pepper, and 1/2 teaspoon salt and cook until the onion begins to brown, about 5 minutes.
  • 5 stir in the garlic and red pepper flakes and cook until fragrant, about 30 seconds.

  • 13 dot with heaping tablespoons of the ricotta, cover, and let stand off the heat for 5 minutes.
  • 14 sprinkle with the basil and the remaining 2 tablespoons parmesan and serve.

  • 1 (28 ounce) can diced tomatoes
  • 1 (15 1/2 ounce) can water (approx)
  • 1 tablespoon olive oil
  • 1 medium onion, minced
  • 1/2 teaspoon salt
  • 3 medium garlic cloves, minced or pressed through a garlic press (about 1 tbsp)
  • 1/8-1/4 teaspoon red pepper flakes
  • 1 lb ground beef (or lamb, chicken, sausage, etc...)
  • 14 lasagna noodles, broken up into pieces about 2 inches long
  • 1 (26 ounce) jar of your favorite pasta sauce
  • 1/2 cup grated parmesan cheese
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese

Recipe

  • 1 heat the oil in large nonstick skillet over medium heat until shimmering. add the onion and 1/2 tsp salt and cook until the onion begins to brown, about 5 minutes. stir in the garlic and pepper flakes and cook until fragrant, about 30 seconds. add the ground meat and cook, breaking apart the meat, until no longer pink, about 4 minutes.
  • 2 scatter the pasta over the meat but do not stir. pour on the diced tomatoes, the water and the jar of sauce over the noodles. cover and bring to a simmer. reduce the heat to a med-low and simmer, stirring occasionally, until the pasta is tender, about 20 minutes.
  • 3 remove from heat and stir in the parmesan cheese. dot with heaping tablespoons of the ricotta and sprinkle the top with shredded mozzarella. let stand about 5 minutes. serve.
  • 4 optional: before serving sprinklw with 2 tbsp parmesan and 3 tbsp chopped fresh basil.

roasted cucumbers and onions with fresh herbs

Ingredients

  • Servings: 4
  • olive oil cooking spray
  • 2 tablespoons butter, cut into small chunks (optional)
  • 1 large cucumber - peeled, seeded, and cut lengthwise into spears
  • 1 small sweet onion (such as vidalia®), cut in half and sliced
  • 1 teaspoon chopped fresh basil
  • 1 teaspoon chopped fresh parsley
  • 1 teaspoon chopped fresh cilantro
  • 1 teaspoon chopped fresh mint

Recipe

    Preparation Time: 15 mins Cook Time: 25 mins Ready Time: 40 mins

  • preheat oven to 350 degrees f (175 degrees c). line a 9x13-inch baking dish with aluminum foil. spray the foil with olive oil cooking spray.
  • spread pieces of butter into the baking sheet and lay cucumber spears over the butter. top with slices of sweet onion and scatter basil, parsley, cilantro, and mint over the top. spray the vegetables again with olive oil cooking spray.
  • roast cucumber mixture in the preheated oven until cucumber spears begin to soften, about 10 minutes. turn the cucumbers and onion slices over and return to oven; roast until cucumbers are tender, 15 to 20 more minutes.

  • 2 heat a nonstick skillet on medium heat.

  • 1/2 cup flour, divided
  • 1 teaspoon salt
  • 2 eggs
  • 2 teaspoons olive oil

  • 1/2 cup chicken stock
  • 1/4 cup dry
  • 1 large lemon
  • 2 tablespoons capers, drained and chopped

Recipe

  • 1 place each chicken breast between two sheets of wax paper.
  • 2 with a mallet, flatten each to about 1/4 inch thick.
  • 3 in one pie plate, beat eggs slightly.
  • 4 in another pie plate, mix 1/4 cup flour with salt.
  • 5 coat chicken with flour mixture, then dip in egg.
  • 6 put battered chicken on a plate.

  • 14 lower heat if needed to maintain medium-low to medium heat so as not to scorch the garlic, then add garlic to the drippings in the skillet.
  • 15 in a cup, mix stock, , lemon juice, and 1 1/2 teaspoons of flour until smooth.
  • 16 stir into mixture in skillet. scrape skillet to incorporate any browned bits from the chicken.
  • 17 heat to a boil, boil 1 minute. stir in capers and remaining 1 tablespoon of butter, simmer until thickened.
  • 18 pour sauce over chicken, sprinkle with parsley and garnish with additional lemon slices.
  • 19 note: occasionally, this has turned out a little more "tangy" than i would like with too much lemon. if this happens, just dilute with a little extra chicken stock or broth mixed with cornstarch or flour to keep thicker consistency.
