Skillet Hopping John

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 2 tablespoons butter or 2 tablespoons margarine, melted
  • 2 (16 ounce) cans black-eyed peas, drained and rinsed
  • 2 cups chicken bouillon or 2 cups chicken broth
  • 1 cup uncooked rice
  • 1 teaspoon salt
  • crushed red pepper flakes

Recipe

  • 1 saute onion and garlic in butter until onion is tender.
  • 2 stir in black-eyed peas, chicken bouillon, rice, salt, and 1/2 teaspoon crushed red pepper.
  • 3 bring mixture to a boil; cover and simmer 20 minutes or until liquid is absorbed and rice is tender.
  • 4 serve with additional crushed red pepper.
