Skillet Cornbread With Prunes

Total Time: 1 hr Preparation Time: 30 mins Cook Time: 30 mins

Ingredients

  • Servings: 8
  • 1/4 cup margarine, melted
  • 1 1/2 cups unbleached all-purpose flour
  • 1/2 cup yellow cornmeal
  • 1/4 cup brown sugar
  • 2 1/2 teaspoons baking powder
  • 1 egg, lightly beaten
  • 1 cup buttermilk
  • 1 cup coarsely chopped pitted dried plum (prunes)

Recipe

  • 1 preheat oven to 375 degrees.
  • 2 in a medium sized bowl, combine the flour, cornmeal, sugar and baking powder.
  • 3 make a well in the center.
  • 4 pour margarine into the well.
  • 5 add egg, buttermilk and prunes.
  • 6 stir just to mix all ingredients together.
  • 7 do not overmix.
  • 8 put the batter into a greased baking dish.
  • 9 bake for 30 minutes or until the bread is golden on top.
  • 10 allow it to cool.
  • 11 cut into 8 wedges.
