Ingredients

  • 3/4 cup chopped dried apricots
  • 3/4 cup chopped prunes
  • 6 cups cold water
  • 1 cinnamon stick
  • 2 slices lemon
  • 3 tablespoons instant tapioca
  • 1 cup white sugar

  • in a large pot combine apricots, prunes and water and let rest 30 minutes.

Sirloin Burgers With Balsamic Mayo, Mushrooms And Swiss

  • 1/4 cup chopped onion
  • 1 1/3 lbs 90% lean ground sirloin
  • 1 tablespoon worcestershire sauce, eyeball the amount
  • steak seasoning or coarse salt and pepper, preferred brand mccormick montreal steak seasoning
  • extra virgin olive oil, for drizzling plus 1 tablespoon, 1 turn of the pan in a slow stream
  • 4 crusty rolls, split
  • 4 portabella mushrooms, thinly sliced
  • coarse salt and pepper
  • 4 slices swiss cheese
  • 3 tablespoons aged balsamic vinegar, eyeball the amount
  • 1/2 cup mayonnaise or 1/2 cup low-fat mayonnaise

  • 1/4 lb baby spinach

  • 1 preheat grill pan or large nonstick skillet.
  • 2 saute onions in a small pan over moderate heat for 3 to 5 minutes until tender.

  • 1/2 pound smoked ham hock
  • 1 large onion, sliced
  • 1 carrot, sliced
  • 4 sprigs fresh parsley
  • 2 cloves garlic
  • 1 teaspoon ground thyme
  • salt and pepper to taste
  • 1 1/2 cups uncooked white rice
  • 1/2 cup dry
  • 1 small red onion, diced

    Cook Time: 8 hrs

  • place beans in a large bowl and cover with several inches of water. let soak 8 hours or overnight.
  • drain and rinse beans and place in a large pot over medium heat with beef broth, chicken broth, ham hock, onion, carrot, parsley, garlic and thyme. bring to a boil, then reduce heat, cover and simmer 6 to 8 hours.
  • strain soup into a large saucepan, reserving bean mixture. remove ham hock and discard. puree bean mixture in a blender or food processor until smooth. stir into reserved broth. cook over low heat 2 hours. season with salt and pepper.
  • in the last 20 minutes of cooking, bring 2 1/2 cups of water to a boil in a medium saucepan. stir in rice. reduce heat, cover and cook 20 minutes.
  • ladle soup into six bowls. top with cooked rice, a spoonful of and a sprinkling of red onion.

  • 1 teaspoon sugar
  • 1 (1/4 ounce) packet yeast
  • 1 1/2 cups whole wheat flour

Ingredients

  • 1/2 cup dry red
  • 1/2 cup ketchup
  • 1/4 cup dark molasses
  • 2 tablespoons red vinegar
  • 1 tablespoon dijon mustard
  • 1 tablespoon worcestershire sauce
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon celery seed
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon curry powder
  • 1/4 teaspoon ground cumin

Recipe

  • 1 in a saucepan, combine all the ingredients along with ½ cup water; mix well.

Ingredients

  • Servings: 12
  • 6 cups flour
  • 1 (1/4 ounce) package active dry yeast
  • 1 lb cubed lamb loin or 1 lb chicken thigh
  • 1 cup white sugar
  • 2 teaspoons cooking oil
  • 1 cup lukewarm water
  • 1/2 cup boiling water
  • 2 green onions
  • 4 teaspoons light soy sauce
  • 4 teaspoons brown sugar
  • 4 teaspoons oyster sauce
  • 1 teaspoon cornstarch (dissolved in 2 t. water)
  • 2 garlic cloves
  • 3 teaspoons salt
  • 6 teaspoons baking powder

Recipe

  • 1 siopao dough:
  • 2 mix flour, salt and baking powder in a medium bowl, set aside.
  • 3 in another bowl dissolve yeast in lukewarm water then add 1 cup of the lour mixture.
  • 4 mix thoroughly.
  • 5 cover with a cloth and let rise 1 hour.
  • 6 meanwhile, dissolve the white sugar in the boiling water.
  • 7 stir well then let cool to lukewarm.
  • 8 pour into the yeast mixture, then add the rest of the prepared flour ixture.
  • 9 stir to blend well.
  • 10 grease a large bowl.
  • 11 turn dough out a floured board and knead for 3 minutes-you want your dough smooth, not sticky.

Sirloin Sliders With Crispy Bacon And Creamy Horseradish Mayo

  • 3/4 lb ground chuck
  • 3/4 lb ground sirloin
  • 2 teaspoons minced garlic
  • 1/4 cup minced onion
  • 1 1/4 teaspoons salt
  • 1/2 teaspoon fresh ground black pepper
  • 1/8 teaspoon fresh ground black pepper
  • 1/2 cup mayonnaise
  • 2 tablespoons sour cream
  • 3 tablespoons prepared horseradish
  • 12 dinner roll-sized small brioche rolls, split in 1/2 crosswise
  • 2 tablespoons melted butter, for brushing buns
  • 6 slices bacon, cooked crisp, drained, and broken into 2-inch pieces

  • 1 in a mixing bowl, combine the chuck, sirloin, garlic, onion, 1 teaspoon of the salt, and 1/2 teaspoon of the pepper and mix gently but thoroughly to combine. using a 2-ounce ice cream scoop, divide the mixture into 12 scant 2-ounce balls of meat. using your hands, shape to form small patties about 3 inches wide and 3/8-inch thick. place on a plate and cover with plastic wrap. allow to sit, refrigerated, at least 1 hour and up to overnight for flavors to mingle.

  • in a medium saucepan, boil rice in water 30 minutes. drain, rinse, and set aside.

  • 1/3 cup pumpkin puree (pure pumpkin, not pumpkin mix!)

  • 1/2 banana, sliced
  • 1 graham cracker square, crumbled (optional)

Recipe

  • 1 mix first 4 ingredients with a spoon until smooth.
  • 2 fold in banana.
  • 3 top with crumbled graham cracker.
  • 4 enjoy!

Single Serving Mini Meat Loafs

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • 100 g lean ground beef
  • 2 tablespoons rolled oats
  • 1/8 cup onion, finely sliced
  • 1/8 cup carrot, finely grated
  • 1/2 egg, slightly beaten
  • 1/4 teaspoon mixed herbs
  • 1/2 teaspoon curry powder
  • 1 teaspoon hoisin sauce
  • 1/2 tablespoon tomato paste

Recipe

  • 1 mix all the ingredients together in a bowl.
  • 2 if time permits chill in the fridge for an hour or so.
  • 3 shape mixture into a loaf.
  • 4 place in an oven proof container and cover.
  • 5 cook for 25min at 180-200 deg c.
  • 6 removed from oven and top with tomato sauce (can mix 1 tbsp of brown sugar if you have a sweet tooth).
  • 7 return to oven for 15-20 more minutes or until cooked.
  • 8 let the loaf sit for a couple of minutes before cutting or serving.

Sour Cream Vegetable Soup

Ingredients

  • Servings: 10
  • 1 pound dried baby lima beans
  • 4 1/2 cups water
  • salt and pepper to taste

  • 1 soak the rice noodles in a large bowl of hot water for a few minutes. drain, rinse with cold water and set aside.

  • 1 bring a few quarts of water to a good rolling boil, using the 2-3 tbsp of salt to flavor the water.
  • 2 you should be able to taste the salt in the pasta water, if you can't taste it, add more salt.
  • 3 prep all ingredients in advance while you wait for the water to boil (mince the garlic, grate the cheese, chop the sun-dried tomatoes, etc.) so that you can toss the sauce together while the pasta is cooking.
  • 4 heat the olive oil in a skillet over medium-low heat, add garlic and turn heat to low.

  • 200 g salted butter, softened
  • 1/2 teaspoon vanilla flavoring
  • 70 g brown sugar
  • 200 g butter, softened
  • 160 g icing sugar, sifted
  • 3 large eggs, lightly beaten
  • 1 teaspoon coffee flavoring (available from bakery supplies shop, you can use 2 tablespoons instant coffee powder dissolved in 1)
  • 1 pinch ground cinnamon, can be added to the coffee flavouring for extra flavour
  • 200 g all-purpose flour, sifted
  • 500 g bread flour, sifted
  • 20 g powdered milk, sifted
  • 75 g caster sugar
  • 6 g salt
  • 8 g instant yeast
  • 1 egg, lightly beaten
  • 270 g water (do not use milk powder if using milk) or 270 g milk (do not use milk powder if using milk)
  • 60 g butter, softened

Recipe

  • 1 for filling:.
  • 2 beat butter in electric mixer on medium speed with the paddle attachment for three minutes.
  • 3 blend in vanilla essence and brown sugar.
  • 4 spoon mixture into bowl and refrigerated until firm.
  • 5 divide mixture into 20 g portion into ball. keep refrigerated until ready to use.
  • 6 for topping:.
  • 7 beat butter and icing sugar in electric mixer with the paddle attachment on medium speed for five minute until mixture is light and fluffy.
  • 8 gradually beat in eggs.
  • 9 mix in coffee flavouring.
  • 10 sift flour mixture and mix on low speed until combined.

  • 13 mix sifted flour, castor sugar and salt in electric mixer with dough hook on low speed for one minute

  • 1 wash the fish head or fish steaks and pat dry. keep aside.
  • 2 heat oil in a wok or saucepan, add curry seeds mixture and ginger and stir fry over high heat for two to three minutes till the seeds pop.
  • 3 cool slightly then pulse in a food processor to create the paste.
  • 4 in the same wok or sauce pan with the remaining oil, add garlic and stir fry till lightly browned.
  • 5 add the curry paste and stir fry till fragrant and cooked.
  • 6 add the onions and stir fry briefly for about one minute.
  • 7 put in half of the coconut milk, bring to a boil, remember to keep stirring to avoid curdling.
  • 8 add the fish, cook for 10 minutes before adding the remaining coconut milk and the tamarind juice.
  • 9 add the tomatoes, red chilli, green chilli, curry leaves, salt and sugar.
  • 10 simmer gently for about five to eight minutes or until the sauce is thickened to a desired consistency and the fish is cooked through.
  • 11 you may add more liquid if there is not enough gravy.
  • 12 serve with steaming hot rice.

Sinigang

  • 9 cups water

Recipe

  • 1 heat oil, add garlic & onion. lightly brown.

  • 4 add meat until brown.
  • 5 add water
  • 6 bring to rolling boil (if using seafood add now & cook for 20 minutes).
  • 7 reduce to medium low.
  • 8 cook meat for 40 mins
  • 9 add sinigang packet.
  • 10 add spinach / bok choy and simmer for another 5 minutes ( it won't take long only until wilted)

Singapore Mai Fun

  • 1 in a large bowl, mix ground turkey, five spice, chili flakes and salt; shape mixture into 1-inch balls; pour flour a large plate and roll balls in flour to coat lightly.
  • 2 pour oil into a 4-5 qt nonstick pan over medium-high heat; add meatballs in a single layer; cook, turning often, until lightly browned all over and barely pink in the center, about 5-7 minutes; using a slotted spoon, transfer to a plate.
  • 3 add garlic and ginger to pan and stir until fragrant, about 30 seconds; add coconut milk, broth and meatballs; bring to a simmer.

  • 2 tablespoons olive oil

  • 2 packages , mama sita's sinigang sa sampalok tamarind seasoning mix
  • 1 teaspoon fish sauce (or to taste)
  • 2 teaspoons miss anna's hot sauce (or your favorite, also to taste)
  • 2 cups white radishes, sliced
  • 2 heads bok choy, cut into 1-2 inch slices

Recipe

  • 1 warm olive oil in bottom of large (i use a 9.5 quart) dutch oven over medium-high heat. brown lamb ribs.
  • 2 reduce heat to medium and add onion and garlic, cook uncovered and stirring frequently until just beginning to soften, about three minutes.
  • 3 add 16 cups of water, the tomato and both packets of tamarind seasoning. cover and cook over medium heat for 45 minutes. during the cooking add fish sauce and hot sauce to taste. i typically revisit the 'taste and adjust' step a couple of times depending on my mood.
  • 4 add white radish, cook additional 10 minutes.
  • 5 turn off flame/heat and add bok choy. allow to rest for 10 minutes.
  • 6 serve in a soup bowl or over rice. enjoy!

Single Delicious Christmas Cake

  • 3 cups dried fruit, cut up (glaced cherries,raisins,currents, candied pineapple etc.)

  • 1 cup nuts (chopped)

  • 1 preheat oven to 325°f.
  • 2 in a large bowl, melt butter in microwave.
  • 3 add beaten eggs, vanilla and molasses.
  • 4 in another bowl, soak fruit in .
  • 5 in another bowl, dust nuts with flour.
  • 6 in another bowl, blend all dry ingredients.
  • 7 in measuring cup, measure milk or buttermilk and add baking soda.
  • 8 drain fruit reserving for pouring on cake after cooling and baking.
  • 9 alternately add fruit mixture and dry mixture to butter, vanilla, egg, molasses mixture.
  • 10 blend well.
  • 11 pour into a 9x5 loaf pan, greased and lined with brown paper or two layers of wax paper.
  • 12 on bottom shelf of oven, set a pan with 2 cups of water.
  • 13 bake cake on shelf above about 1 1/2 hours or until done. altitude will vary the time.
  • 14 note: i downsized my cake so i could also have a smaller version to try. the smaller one was done a tad earlier than the big one. both are done when an inserted toothpick comes out clean.cake will also crack on the top.
  • 15 when cooled completely and removed from pans, pierce cake with a fork, and gently pour remaining into cake.

  • 4 fresh pineapple
  • 400 g caster sugar
  • 4 cm piece cinnamon sticks
  • 1 star anise, use 4 segments
  • 4 cloves
  • 2 tablespoons lemon juice or 2 tablespoons lime juice
  • 340 g plain flour
  • 340 g cake flour
  • 1 tablespoon salt
  • 2 tablespoons icing sugar
  • 450 g butter, cubed (lurpak is great)
  • 2 egg yolks
  • 1 teaspoon vanilla essence
  • 50 ml ice water
  • 2 beaten eggs, for glaze

  • 1 filling.
  • 2 to make the jam, grate the pineapple coarsely.
  • 3 combine the grated pineapple with the rest of the ingredients in a heavy-based saucepan and cook over a moderate heat, stirring occasionally, until mixture is almost dry.
  • 4 set aside to cool.
  • 5 pastry dough.
  • 6 put sifted flour, salt and sugar in a mixing bowl.
  • 7 rub in butter until mixture resembles breadcrumbs.
  • 8 beat in the egg yolk and add ice-cold water and essence.
  • 9 mix well to form a dough.
  • 10 place in a plastic bag and chill in the refrigerator for 30 minutes.
  • 11 roll pastry out to 0.5 cm thickness on a lightly-floured tabletop and cut out rounds with a pie cutter.

  • 3 lbs beef short ribs
  • 3 garlic cloves, finely chopped
  • 1 teaspoon finely grated fresh ginger
  • 1 teaspoon salt
  • 3 tablespoons peanut oil
  • 1/4 cup dark soy sauce
  • 1/2 cup water
  • 2 tablespoons dry
  • 1/2 teaspoon five-spice powder
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon palm sugar (or substitute) or 1 tablespoon honey

Recipe

  • 1 have spareribs cut into individual ribs and short lengths. they are easier to cook and eat this way.
  • 2 rub them with garlic, ginger, and salt.
  • 3 heat oil in a wok and stir fry for 5 or 6 minutes over high heat until ribs are browned.
  • 4 combine all the other ingredients and pour over the ribs.
  • 5 bring to boil, then reduce heat to simmer, cover pan and cook until meat on ribs is very tender and liquid reduced.

Singin' Hinnies - Northumbrian Tea-time Griddle Cakes/scones

Creamy French-american Soup

Ingredients

  • 3 slices provolone cheese

  • preheat oven to broiler setting.
  • melt butter in a saucepan over medium heat. add onions and cook until softened, 5 to 8 minutes. stir in the heavy cream and beef broth. bring to a boil, then reduce heat to low and simmer, loosely covered, for 20 minutes. season with salt and pepper, to taste.
  • top each slice of bread with one slice of provolone and one slice of swiss cheese; place on a cookie sheet. broil on top oven rack until the cheese browns and the edges of the bread are crispy, 3 to 5 minutes.
  • to serve, ladle soup into 3 bowls and top with one slice of the cheese-topped bread.

  • 7 star anise

  • 3 hard-boiled eggs, peeled (optional)

Recipe

  • 1 in a bowl, stir together light and dark soy sauces, crushed peppercorns, garlic, and 2 tablespoons orange juice. separate ribs between each bone into individual ribs, and place in the marinade.
  • 2 cover, and set aside for at least 30 minutes. (if marinating much longer than 30 minutes, refrigerate.).
  • 3 transfer marinade to a large stockpot, and set ribs aside. to the stockpot add remaining 1 cup orange juice, water, cinnamon sticks, star anise, and sugar. bring to a boil.

  • 3 add in beef broth, soy sauce, chili paste and sugar; bring to a boil over medium heat stirring and simmer for 5 minutes.
  • 4 season with black pepper to taste and salt if desired.
  • 5 reduce heat to low and add in the cooked noodles and chickpeas; toss to combine until heated through.
  • 6 sprinkle with green onions.
