Slow Cooked Beef Roast

Ingredients
- Servings: 8
- 5 lbs beef roast
- 2 teaspoons salt
- 1 tablespoon sugar
- 4 tablespoons quick-cooking tapioca
- 2 cups tomato juice
- 1 lb carrot, cut into 1 inch pieces
- 3 stalks sliced celery
- 2 medium sliced onions
- 8 small potatoes, peeled and cubed
Recipe
- 1 grease roasting pan lightly.
- 2 mix ingredients for sauce.
- 3 place roast into roasting pan.
- 4 cut vegetables into individual servings.
- 5 pour sauce over beef and vegetables.
- 6 cover tightly and don't peek.
- 7 bake in a 250 degree oven for 5 hours.
