Sloppy Tofu

Ingredients
- Servings: 4
- 1 medium onion, diced
- 1 green pepper, diced
- 2 cloves garlic, minced or pressed
- 1 lb lite firm tofu, patted dry,crumbled
- 2 tablespoons light soy sauce
- 2 cups tomato sauce
- 1 tablespoon chili powder (i know, it's a lot. scale back, if desired, but bread and veggies should cut the heat)
- 1/2 teaspoon ground cumin
Recipe
- 1 heat skillet over medium high.
- 2 cook onion, pepper, and garlic until soft.
- 3 add tofu and soy sauce.
- 4 cook, stirring constantly until brown.
- 5 add tomato sauce and seasonings.
- 6 cook 2-3 more minutes to incorporate.
- 7 serve over hamburger buns (i also saw mom using leftovers as a tortilla chip dip).
