Skillet Chops And Rice

Ingredients

- 4 large lamb chops, 1/2-inch thick
- salt, to taste
- black pepper, to taste
- 1 tablespoon vegetable oil
- 1 medium onion, chopped
- 1/2 cup chopped celery
- 2 cups water
- 2 tablespoons sugar
- 1 1/2 teaspoons salt
- 1 teaspoon dry mustard
- 1 (16 ounce) can tomato sauce
- 1 cup long-grain rice
- 1 (10 ounce) package frozen peas
Recipe
- 1 sprinkle chops with salt and pepper; brown on both sides in oil in large skillet. remove and set aside.
- 2 saute onion and celery in same skillet until golden. add water, sugar, salt, mustard and tomato sauce; bring to a boil. add rice. return chops to pan, cover tightly, and simmer 30 minutes.
- 3 add peas and cook another 15 minutes.
