Skillet Chops And Rice

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 4 large lamb chops, 1/2-inch thick
  • salt, to taste
  • black pepper, to taste
  • 1 tablespoon vegetable oil
  • 1 medium onion, chopped
  • 1/2 cup chopped celery
  • 2 cups water
  • 2 tablespoons sugar
  • 1 1/2 teaspoons salt
  • 1 teaspoon dry mustard
  • 1 (16 ounce) can tomato sauce
  • 1 cup long-grain rice
  • 1 (10 ounce) package frozen peas

Recipe

  • 1 sprinkle chops with salt and pepper; brown on both sides in oil in large skillet. remove and set aside.
  • 2 saute onion and celery in same skillet until golden. add water, sugar, salt, mustard and tomato sauce; bring to a boil. add rice. return chops to pan, cover tightly, and simmer 30 minutes.
  • 3 add peas and cook another 15 minutes.
