- 3 1/2 lbs boneless lamb loin roast
- 1 tablespoon vegetable oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 4 cups peeled sweet potatoes, 1-inch pieces
- 1 medium onion, sliced
- 6 garlic cloves, peeled
- 1 cup chicken broth
Recipe
- 1 remove fat from lamb. heat oil in 10-inch skillet over medium-high heat. sprinkle salt and pepper over lamb. cook lamb in oil about 10 minutes, turning occasionally, until brown on all sides.
- 2 place sweet potatoes, onion and garlic in 3-1/2- to 6-quart slow cooker. place lamb on vegetables. pour broth over lamb.
