Seafood Trio With Fire Roasted Tomato Garlic Sauce

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • Servings: 2
  • 1 lb mussels
  • 1/2 lb scallops
  • 1 lb large shrimp
  • 2 tablespoons olive oil
  • 1/2 cup chopped onions or 1/2 cup shallot
  • 2 -5 garlic cloves, chopped
  • 1 (14 ounce) can fire-roasted tomatoes
  • 1/2 cup chicken stock

Recipe

  • 1 add onion to olive oil over medium heat.
  • 2 cook until translucent.
  • 3 add garlic and cook for 1-2 minutes.
  • 4 add tomatoes and chicken stock.
  • 5 bring to a boil.
  • 6 add seafood to pot and cover.
  • 7 cook for 5-6 minutes or until mussels have opened and shrimp and scallops are opaque.
