Ingredients

- 1 lb mussels
- 1/2 lb scallops
- 1 lb large shrimp
- 2 tablespoons olive oil
- 1/2 cup chopped onions or 1/2 cup shallot
- 2 -5 garlic cloves, chopped
- 1 (14 ounce) can fire-roasted tomatoes
- 1/2 cup chicken stock
Recipe
- 1 add onion to olive oil over medium heat.
- 2 cook until translucent.
- 3 add garlic and cook for 1-2 minutes.
- 4 add tomatoes and chicken stock.
- 5 bring to a boil.
- 6 add seafood to pot and cover.
- 7 cook for 5-6 minutes or until mussels have opened and shrimp and scallops are opaque.
