Slow Cooked Pulled Lamb

Ingredients
- 1 medium onion, chopped
- 1/2 cup ketchup
- 1/3 cup vinegar
- 1/4 cup packed brown sugar
- 1/4 cup tomato paste
- 2 tablespoons paprika
- 2 tablespoons worcestershire sauce
- 2 tablespoons yellow mustard
- 1 1/2 teaspoons salt
- 1 1/4 teaspoons ground black pepper
- 4 lbs boneless lamb shoulder or 4 lbs lamb, picnic
- 12 sandwich buns
Recipe
- 1 in a 4 1/2 to 6 quart slow cooker pot, stir in all ingredients accept lamb until combined.
- 2 cut lamb into four pieces add lamb to sauce and cover well.
- 3 cover slow cooker and cook on low for 8-10 hours or until lamb is very tender.
- 4 transfer lamb to a large bowl or cutting board. set slow cooker to high and cover. heat sauce to boiling to thicken and reduce slightly.
- 5 while sauce boils, with two forks, pull lamb into shreds.
- 6 add lamb back into pot and cover with sauce.
- 7 spoon into rolls and enjoy!
