Skillet Lamb Chops

Ingredients

  • Servings: 4
  • 4 (8 ounce) lamb loin chops, well trimmed
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons butter
  • 2 medium onions, cut into 6 wedges each
  • 3 medium carrots, cut into 1 inch chunks

Recipe

  • 1 season both side of the lamb chops with the cinnamon, salt and pepper.
  • 2 in a large skillet, melt the butter over medium high heat, brown the lamb chops for 4-5 minutes per side.
  • 3 add the onions and carrots to the skillet, reduce the heat to low, cover, and cook for 25 to 30 minutes, or until the vegetables are tender and the lamb chops are cooked through, serve the vegetables with the lamb chops.
