Senegalese Chicken And Vegetable Curry

Ingredients

- 2 lbs chicken, cubed
- 2 tablespoons olive oil
- salt
- pepper
- 2 onions, chopped
- 1 bell pepper, chopped
- 1 carrot, chopped
- 1 eggplant, chopped
- 1 small cauliflower, chopped
- 1 potato, chopped
- 1 tablespoon curry powder
- 1 teaspoon thyme
- 1/2 teaspoon cayenne pepper (to taste)
- 1/2 teaspoon salt
- 2 cups tomato sauce
- 1 tablespoon vinegar
- rice or couscous, cooked
Recipe
- 1 brown chicken in oil.
- 2 add salt and pepper.
- 3 remove from the pan.
- 4 add onions to the same pot along with the bell pepper.
- 5 saute for 5 minutes.
- 6 add the remaining vegetables, curry powder, thyme, cayenne, and salt. simmer for 10 minutes.
- 7 return chicken to the pan.
- 8 add tomato sauce. bring to a simmer and cook for 30 minutes.
- 9 add vinegar, stir well and serve over rice or couscous.
