Senegalese Chicken And Vegetable Curry

Ingredients

  • Servings: 4
  • 2 lbs chicken, cubed
  • 2 tablespoons olive oil
  • salt
  • pepper
  • 2 onions, chopped
  • 1 bell pepper, chopped
  • 1 carrot, chopped
  • 1 eggplant, chopped
  • 1 small cauliflower, chopped
  • 1 potato, chopped
  • 1 tablespoon curry powder
  • 1 teaspoon thyme
  • 1/2 teaspoon cayenne pepper (to taste)
  • 1/2 teaspoon salt
  • 2 cups tomato sauce
  • 1 tablespoon vinegar
  • rice or couscous, cooked

Recipe

  • 1 brown chicken in oil.
  • 2 add salt and pepper.
  • 3 remove from the pan.
  • 4 add onions to the same pot along with the bell pepper.
  • 5 saute for 5 minutes.
  • 6 add the remaining vegetables, curry powder, thyme, cayenne, and salt. simmer for 10 minutes.
  • 7 return chicken to the pan.
  • 8 add tomato sauce. bring to a simmer and cook for 30 minutes.
  • 9 add vinegar, stir well and serve over rice or couscous.
