Semi-healthy Mac & Cheese

Ingredients
- 12 ounces pasta
- 1 1/2 cups cheese, shredded
- 2 cups plain soymilk
- 1 1/2 tablespoons plain flour
- 2 tablespoons margarine
- 2 teaspoons dijon mustard
- 1/4 teaspoon black pepper
- 1/2 teaspoon sea salt
Recipe
- 1 cook pasta and drain; keep warm.
- 2 in same saucepan, add milk and flour and whisk until smooth; heat to boil stirring all the time to make sure does not stick. add margarine and stir until melted.
- 3 add mustard and black pepper.
- 4 once at a boil, allow to simmer about 3 minutes til thickened slightly. remove from heat.
- 5 add cheese stirring until totally melted.
- 6 add pasta back into saucepan; stir until well coated.
- 7 enjoy!
