Semi-healthy Mac & Cheese

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • 12 ounces pasta
  • 1 1/2 cups cheese, shredded
  • 2 cups plain soymilk
  • 1 1/2 tablespoons plain flour
  • 2 tablespoons margarine
  • 2 teaspoons dijon mustard
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon sea salt

Recipe

  • 1 cook pasta and drain; keep warm.
  • 2 in same saucepan, add milk and flour and whisk until smooth; heat to boil stirring all the time to make sure does not stick. add margarine and stir until melted.
  • 3 add mustard and black pepper.
  • 4 once at a boil, allow to simmer about 3 minutes til thickened slightly. remove from heat.
  • 5 add cheese stirring until totally melted.
  • 6 add pasta back into saucepan; stir until well coated.
  • 7 enjoy!
