Simple Salmon Cakes

Ingredients

  • Servings: 4
  • 12 ounces boneless skinless salmon
  • 1/2 cup green pepper, diced
  • 1/2 cup green onion, chopped
  • 2 eggs
  • 1/2 cup italian seasoned breadcrumbs
  • 1 tablespoon garlic, minced
  • 1/2 tablespoon dijon mustard
  • 1 teaspoon lemon juice
  • 1/4 teaspoon dried dill
  • pepper

Recipe

  • 1 in a large bowl, combine salmon, eggs, lemon juice, mustard, garlic, dill and pepper. stir in green peppers, green onions and bread crumbs. form into 4 patties. spray skillet with nonstick cooking spray. cook salmon cakes on medium low heat for 5 minutes on each side, or until golden brown.
