Ski Cake

Ingredients

  • Servings: 14
  • 1/2 cup butter
  • 1 1/4 cups sugar
  • 2 cups flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 3 egg whites
  • 3 squares semi-sweet chocolate, grated
  • 2 teaspoons vanilla
  • 3 egg yolks
  • 2 cups icing sugar
  • 1/2 cup butter
  • 2 teaspoons vanilla
  • 3 squares semi-sweet chocolate

Recipe

  • 1 cake: beat butter and 1 cup sugar until light and fluffy.
  • 2 in a separate bowl, mix flour, baking powder and salt together; add to butter mixture and mix well.
  • 3 add milk gradually.
  • 4 in another bowl, beat egg whites with remaining 1/2 cup sugar, and fold gently into mixture; add grated chocolate and vanilla.
  • 5 grease two 9-inch round cake pans and line with parchment paper.
  • 6 pour cake batter evenly between the pans and bake at 350f for 25-30 minutes. let cake cool.
  • 7 icing: mix yolks, sugar, butter and vanilla until fluffy.
  • 8 spread icing on one cake layer; place second layer on top and spread icing over top and sides.
  • 9 melt chocolate and drizzle over icing. use the tines of a fork to make squiggly lines, giving the impression of ski marks in snow.
  • 10 makes 14 servings.
