Skewered Crocodile With Lime & Ginger Sauce

Total Time: 1 hr 30 mins Preparation Time: 1 hr 20 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 400 g crocodile, in 2 cm cubes
  • 40 ml lime juice
  • 200 ml chicken stock
  • 30 ml honey
  • 30 g brown sugar
  • 5 g ginger, finely diced
  • 30 ml oil
  • 10 g cornflour
  • salt and pepper
  • 8 bamboo skewers

Recipe

  • 1 thread crocodile meat bamboo skewers, place in flat dish, season with salt and pepper, pour lime juice over it and place in fridge for about an hour.
  • 2 remove skewers and save the residue for the sauce.
  • 3 heat oil in a frying pan and saute crocodile for about 5 min, set aside and keep warm.
  • 4 combine lime juice, honey, brown sugar, ginger, chicken stock and corn flour in a saucepan.
  • 5 bring to the boil and reduce heat and simmer for 2 min.
  • 6 place skewers on plates, spoon sauce over meat and garnish with fresh herbs.
