Seven Minute Frosting (diabetic)

Total Time: 7 mins Preparation Time: 7 mins

Ingredients

  • 2 egg whites
  • 1/4 teaspoon cream of tartar
  • 1/3 cup sugar substitute
  • 1/3 cup water
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Recipe

  • 1 combine egg whites, cream of tartar, sugar substitute, water and salt in top of double boiler. beat til frothy.
  • 2 place over boiling water.
  • 3 beat constantly until it thickens and will hold peaks.
  • 4 remove from boiling water.
  • 5 beat in vanilla.
  • 6 continue beating until smooth and of spreading consistency.
  • 7 (will also cover 30 cupcakes).
