Simple Salsa

Ingredients
- 1 gallon fresh tomato
- 8 -10 fresh jalapenos, chopped
- 2 teaspoons cumin
- 2 teaspoons salt
- 1 teaspoon garlic powder
Recipe
- 1 plunge tomatoes in boiling water for one minute.
- 2 remove and let cool till you can handle them comfortably.
- 3 core, peel, chop and place in large pot (a dutch oven works great).
- 4 dice jalapenos and add to tomatoes.
- 5 wear gloves if your hands are sensitive to peppers.
- 6 add cumin, salt and garlic powder.
- 7 bring to a boil.
- 8 reduce heat and simmer, stirring often, till reduced almost by half.
- 9 this will take 1 - 1 1/2 hours.
- 10 let cool and place desired amount in freezer bags.
- 11 place in freezer.
