Strawberry Rhubarb Pink Lady Pie

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • 1 1/2 cups flour
  • 1/4 teaspoon salt
  • 1 1/2 tablespoons sugar
  • 1/2 cup oil
  • 2 tablespoons milk
  • 2 cups chopped rhubarb
  • 1 cup sugar
  • 1 (3 ounce) package strawberry Jell-O gelatin dessert
  • 1 tablespoon lemon juice
  • 2 cups Cool Whip

Recipe

  • 1 For crust, mix 1 1/2 c flour, 1/4 tsp salt, 1 1/2 T sugar, 1/2 c oil and 2 T milk. Press into a 9 inch pie pan, making an edge.
  • 2 Bake at 350 degrees for 10-15 minutes. Cool.
  • 3 Cook rhubarb and 1 cup sugar slowly until tender. Add dry jello and stir gently until dissolved. Cool.
  • 4 Add lemon juice to rhubarb mixture. Fold in Cool Whip.
  • 5 Pour into crust;refrigerate.
  • 6 Can be frozen.
