Swedish 1-2-3 Vinegar

Ingredients

  • 3 cups water
  • 2 cups sugar
  • 1 cup white wine vinegar
  • 1 carrot, peeled and sliced
  • 1 onion, sliced
  • 5 white peppercorns
  • 2 bay leaves, preferably fresh
  • 2 allspice berries

Recipe

  • 1 Combine all the ingredients in a saucepan and bring to boil over medium heat.
  • 2 Stir until all the sugar is completely dissolved.
  • 3 Remove from heat and let cool.
  • 4 Pour the cooled vinegar into a jar, seal and refrigerate.
  • 5 Allow to marinate six hours, or overnight.
