Ingredients
- 1/2 cup fresh corn or 1/2 cup frozen corn
- 1 teaspoon butter
- 1/4 cup cooking onion, diced
- 2 cherry tomatoes, quartered
Recipe
- 1 if using frozen corn, thaw first!
- 2 melt butter in a medium skillet over medium heat.
- 3 saute corn kernels just until tender, then mix in onion.
- 4 continue to saute until onion is just beginning to turn golden.
- 5 add tomatoes, heat until warm.
