Quick & Easy Lemon Ice Cream

Total Time: 4 hrs 10 mins Preparation Time: 10 mins Cook Time: 4 hrs

Ingredients

  • 2 cups whipping cream
  • 1 cup superfine sugar, domino brand
  • 1 teaspoon lemon zest, finely grated
  • 1/3 cup lemon juice, freshly squeezed
  • mint leaf (to garnish)

Recipe

  • 1 in large bowl, combine cream and sugar.
  • 2 stir until sugar dissolves.
  • 3 blend in lemon zest and lemon juice.
  • 4 pour into shallow pan.
  • 5 freeze until firm, about 4 hours.
  • 6 spoon into dessert glasses or ice cream cones.
  • 7 garnish with mint and berries or lemon, if desired.
  • 8 note: use mint leaves and any type of berries or very fine thin slices of lemon coated with granulated sugar for garnish.
