Papaya Ice Cream

Ingredients

- 2 tablespoons cornstarch
- 1 cup sugar
- 1/8 teaspoon salt
- 2 cups hot milk
- 2 eggs, separated and well beaten
- 1 quart half-and-half
- 2 teaspoons vanilla extract
- 4 cups ripe papayas, mashed
Recipe
- 1 combine dry ingredients.
- 2 gradually add milk, while stirring.
- 3 cook in double boiler for 10 minutes stirring occasionally.
- 4 add the egg yolks very gradually while stirring, cooking until it coats the spoon.
- 5 cool.
- 6 add cream, egg whites, and vanilla.
- 7 strain out any lumps.
- 8 chill according to your ice cream-maker instructions.
- 9 half-way through chilling, add mashed papaya.
- 10 finsh chilling per instructions.
