Papaya Ice Cream

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 8
  • 2 tablespoons cornstarch
  • 1 cup sugar
  • 1/8 teaspoon salt
  • 2 cups hot milk
  • 2 eggs, separated and well beaten
  • 1 quart half-and-half
  • 2 teaspoons vanilla extract
  • 4 cups ripe papayas, mashed

Recipe

  • 1 combine dry ingredients.
  • 2 gradually add milk, while stirring.
  • 3 cook in double boiler for 10 minutes stirring occasionally.
  • 4 add the egg yolks very gradually while stirring, cooking until it coats the spoon.
  • 5 cool.
  • 6 add cream, egg whites, and vanilla.
  • 7 strain out any lumps.
  • 8 chill according to your ice cream-maker instructions.
  • 9 half-way through chilling, add mashed papaya.
  • 10 finsh chilling per instructions.
