Southwest Black Bean Salad

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 1 lb southwest green chile sausage
  • 3 cups black beans, cooked
  • 1 cup red onion, chopped
  • 2 anaheim chilies, roasted, seeded and diced
  • 1 jalapeno, pickled, seeded and diced
  • 1 cup cilantro, chopped
  • 1 teaspoon cumin seed
  • 2 tablespoons lime juice, fresh
  • 1 tablespoon red wine vinegar
  • 1 tablespoon djon mustard
  • 1 teaspoon garlic, minced
  • 1/2 cup olive oil
  • salt and pepper

Recipe

  • 1 in a skillet over med. heat, fry the sausage for 5 minutes, breaking it up as it cooks. put it into a large bowl with the black beans and remaining salad ingredients.
  • 2 dressing:.
  • 3 in a small skillet, shake and stir the cumin seeds over med. high heat until they begin to smoke and give off a toasty aroma. put them in a bowl or mortar and pestle to crush them briefly.
  • 4 in a small bowl, add the lime juice, vinegar, mustard and garlic and gradually whisk in the oil. taste for salt and pepper.
  • 5 pour the dressing over the salad and toss well.
