Simple Rice & Peas

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 1 (28 ounce) can red kidney beans
  • 1 (15 ounce) can coconut milk
  • 2 cups long-grain white rice
  • 1 small onion, chopped
  • 1 garlic clove, chopped
  • 1/4 teaspoon dried thyme
  • 1 tablespoon vegetable oil
  • 1 scotch bonnet pepper, habenero

Recipe

  • 1 drain the liquid from the cans of beans into a measuring cup and add cocnut milk and enough water to make 4 cups liquid.
  • 2 place liquid in a pot with the beans,onion,garlic,thyme and oil,bring to a boil.add rice and stir for a minute.
  • 3 reduce heat to medium-low. place scotch bonnet on top of liquid and cover tightly.
  • 4 simmer for 30 minutes or until rice is cooked.remove scotch bonnet before serving.

Simple Rack Of Lamb

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 1 rack of lamb
  • 1 dash salt
  • 1 dash pepper
  • 1 tablespoon tomato powder (or your favorite spices)
  • 1 tablespoon olive oil
  • 1 garlic clove, crushed

Recipe

  • 1 pan sear the rack of lamb fat side down first untill golden brown.
  • 2 on the fat side of the rack, sprinkle with salt, pepper, tomato powder (or your favorite herbal spices,) drizzle with olive oil and place on top one skin-on crushed garlic clove.
  • 3 bake on center rack at 180°c(360°f) for about 20 minutes (you can arrange it so that juices drip veggies baking on a lower rack.
  • 4 test for internal temp of 55°c(130°f) for rare and 60°c(140°f) for medium rare. cut, and sprinkle with coarse salt.
  • 5 for sauce: in a pan, heat all the reserved drippings and whisk vigorously untill pale. serve over lamb chop.

Coconut Rosette

Ingredients

  • Servings: 6
  • 4 1/4 cups cornstarch
  • 1 1/4 cups butter
  • 2 cups all-purpose flour
  • 2 cups white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 2 cups shredded coconut

Recipe

  • preheat oven to 350 degrees f (175 degrees c). lightly grease or line baking sheets with parchment paper.
  • cream the butter with the sugar until light and fluffy. beat in the eggs, vanilla and almond extracts.
  • add the cornstarch, flour and finely grated coconut. mix until blended and smooth.
  • make small balls about 1inch in diameter, then roll on floured board into a 7 inch long strip. twist into a figure eight. place cookies on the prepared baking sheets.
  • bake at 350 degrees f (175 degrees c) for 20 minutes. remove from cookie sheets and let cool. may be drizzled with melted chocolate, if desired.

Simple Roasted Carrots

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 lb pre-cut baby carrots
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt

Recipe

  • 1 heat oven to 475 degrees.
  • 2 in shallow baking dish, toss carrots with oil and salt.
  • 3 roast 12 minutes, then shake pan to toss.
  • 4 roast another 8 minutes, shaking pan once or twice, until brown and tender.
  • 5 serve hot.

Simple Russian Salad

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • 225 g boiled potatoes, diced
  • 75 g boiled carrots, diced
  • 75 g boiled green peas
  • 3 tablespoons extra light mayonnaise

Recipe

  • 1 cook the potatoes however you like but i prefer to keep them whole with the skins on while boiling. then when cooled, peel and dice them.
  • 2 in a large bowl, add potatoes, carrots, and peas.
  • 3 gently fold in mayonnaise spoonful by spoonful, so as not to break up the potatoes, until the vegetables are lightly coated or whatever consistency you prefer.

chewy noels

Ingredients

  • Servings: 2
  • 2 tablespoons butter
  • 1 cup packed brown sugar
  • 1 cup chopped walnuts
  • 1/3 cup all-purpose flour
  • 1/8 teaspoon baking soda
  • 1/8 teaspoon salt
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup confectioners' sugar for decoration

Recipe

  • preheat oven to 350 degrees f (175 degrees c).
  • in a 9x9x2 inch baking pan, melt the butter or margarine.
  • stir together the brown sugar, nuts, flour and salt. add the eggs and vanilla. carefully pour the flour and egg mixture oven the melted butter. do not stir!
  • bake at 350 degrees f (175 degrees c) for 20 to 25 minutes. sift confectioners'' sugar over top. placed waxed paper under wire rack, immediately invert pan rack. let bars cool then dust again with confectioners' sugar. cut into bars and write noel on each bar with green decorator icing.

Simple Roasted Tomato Soup

Ingredients

  • Servings: 6
  • 1 onion, quartered
  • 1 garlic head, peeled and woody tip trimmed
  • 14 roma tomatoes, halved, cored and seeded
  • 4 carrots, rough chopped
  • 1/4 cup olive oil
  • 1 (15 ounce) can tomato sauce
  • 4 cups chicken broth
  • 1 teaspoon dried basil
  • 2 tablespoons sugar
  • salt and pepper

Recipe

  • 1 preheat oven to 375 degrees. prepare the onion, garlic, tomatoes, and carrots and place them on a cookie sheet. cover with the olive oil and season with salt and pepper. place in the oven and roast for an hour.
  • 2 remove the vegetables from the oven and transfer to a food processor. puree until completely smooth (or transfer to a large pot and use an immersion blender.
  • 3 transfer the pureed vegetables to a large pot and heat of medium low heat. pour in the chicken broth and tomato sauce and season with basil.
  • 4 add in one tablespoon of sugar and taste, if it still tastes slightly bitter from the tomato sauce slowly add in the other tablespoon of sugar, a little at a time, keep tasting to suit your tastes.
  • 5 salt and pepper to taste and reduce heat and allow to simmer 15 minutes so the flavors meld.
