Pate Sucree

Ingredients

  • Servings: 2
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/3 cup white sugar
  • 3 egg yolks
  • 2/3 cup butter, softened

Recipe

    Preparation Time: 15 mins Cook Time: 20 mins Ready Time: 2 hrs 40 mins

  • Put flour in a large bowl, and make a hole in the middle. In the hole, place the salt, sugar, egg yolks, and softened butter.
  • Mingle the ingredients in the middle, adding flour little by little, and stopping as soon as you achieve a homogeneous mixture.
  • Shape the dough into a ball and cover it in cellophane wrap and let it rest in the refrigerator for at least 30 minutes.

Flapper Pie II

Ingredients

  • Servings: 1
  • 2 1/2 cups graham cracker crumbs
  • 1/2 cup brown sugar
  • 1/2 cup melted butter
  • 3 egg yolks
  • 1/2 cup white sugar
  • 2 1/2 tablespoons cornstarch
  • 1 pinch salt
  • 2 cups milk
  • 3 egg whites
  • 1/4 cup white sugar

    Preparation Time: 40 mins Cook Time: 5 mins Ready Time: 1 hr 45 mins

  • Preheat oven to 425 degrees F (220 degrees C).
  • In a medium bowl, mix graham cracker crumbs, brown sugar, and melted butter until well blended. Reserve 1/2 cup of crumb mixture for the top of pie. Press remaining crumb mixture into a 9-inch pie plate.
  • In the top of a double boiler, mix the egg yolks, 1/2 cup white sugar, the cornstarch and salt. Very slowly and gradually and while stirring constantly, add the milk. Continue to stir until the mixture come to a boil or the mixture becomes thick and smooth. Pour into pie crust.
  • In a large glass or metal mixing bowl, beat egg whites until foamy. Gradually add 1/4 cup white sugar, continuing to beat until stiff peaks form. Spread meringue over pie, covering completely. Sprinkle reserved crumb mixture over the top.
  • Bake in the preheated oven for 5 to 10 minutes, or until meringue is golden brown in spots. Allow to cool completely before serving.

Bertha's Pecan Cream Pie

Ingredients

  • Servings: 1
  • 1 (9 inch) pie shell, baked
  • 4 egg yolks
  • 2 cups milk
  • 2/3 cup white sugar
  • 1/3 cup cornstarch
  • 1 pinch salt
  • 1/2 teaspoon vanilla extract
  • 1 cup ground pecans
  • 4 egg whites
  • 1/2 teaspoon vanilla extract
  • 6 tablespoons white sugar
  • 1/4 cup ground pecans

Recipe

    Preparation Time: 30 mins Cook Time: 15 mins Ready Time: 1 hr

  • Preheat oven to 350 degrees F (175 degrees C.)
  • In the top of a double boiler, combine yolks, milk, 2/3 cup sugar, cornstarch and salt. Cook, stirring constantly, until mixture thickens. Stir in 1/2 teaspoon vanilla and 1 cup pecans. Pour filling into baked pie shell.
  • In a large glass or metal mixing bowl, beat egg whites until foamy. Beat in 1/2 teaspoon vanilla and gradually add 6 tablespoons white sugar, continuing to beat until stiff peaks form. Spread meringue over pie, covering completely. Sprinkle with 1/4 cup ground pecans.
  • Bake in the preheated oven for 10 to 15 minutes, or until meringue is delicately browned.

Miss Hattie's Apple Pie

Ingredients

  • Servings: 1
  • 2 (9 inch) unbaked pie crusts
  • 12 unpeeled Granny Smith apples, cored and quartered
  • 1 cup white sugar
  • 2 teaspoons ground cinnamon
  • 1 1/2 teaspoons ground cloves
  • 1 teaspoon freshly grated nutmeg
  • 3 tablespoons butter
  • 3 tablespoons melted butter

    Preparation Time: 45 mins Cook Time: 1 hr

    Ready Time: 2 hrs

  • Preheat oven to 375 degrees F (190 degrees C.)
  • Shred the apples into a large bowl. Stir in sugar, cinnamon, cloves and nutmeg. Mix well and place in bottom crust. Dot the top with 3 tablespoons butter.
  • On a cutting board, place rolled out (or packaged) pie crust. With a leaf or apple cookie cutter, cut shapes from the pie crust. Position the cutouts all over the top of the pie, leaving small spaces between cutouts for the vent holes.
  • Bake in the preheated oven for 30 minutes. Remove pie from oven and brush with 3 tablespoons melted butter. Return to oven and bake an additional 15 minutes, or until golden brown. Place a piece of aluminum foil under the pan in case it boils over.

Baked Chicken Marsala

Ingredients

  • Servings: 6
  • cooking spray
  • 1/4 cup butter
  • 2 (4.5 ounce) cans mushrooms, drained
  • 1/4 cup onion, chopped
  • 3 (10.75 ounce) cans cream of mushroom soup
  • 1 (14.5 ounce) can chicken broth
  • 1 cup Marsala wine
  • 3 pounds chicken pieces
  • salt and pepper to taste
  • 1/2 teaspoon garlic salt

  • Preheat oven to 350 degrees F (175 degrees C). Prepare a large baking dish with cooking spray.
  • Melt butter in a skillet over medium heat. Cook and stir mushrooms and onion in butter until the onion is translucent, about 5 minutes.
  • Stir cream of mushroom soup, chicken broth, and Marsala wine together in a large bowl. Stir mushroom mixture into soup mixture.
  • Spread chicken pieces into prepared baking dish; season with salt and pepper. Pour soup mixture over the chicken and cover the dish with aluminum foil.
  • Bake in preheated oven until the chicken is no longer pink at the bone and the juices run clear, about 90 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
