Shepherds Pie

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • 2 1/2 lbs ground beef
  • 1/2 large onion, diced
  • 1/4 teaspoon salt
  • 1/2 teaspoon fresh black pepper
  • 3 sprigs fresh thyme (about a tablespoon)
  • 1/2 tablespoon dried basil or 4 -5 leaves fresh basil, chopped
  • 1 carrot, shredded
  • 3/4 cup sweet corn
  • 1 (6 ounce) can tomato paste
  • 1.5 (6 ounce) cans water
  • 2 tablespoons worcestershire sauce
  • 8 large potatoes, peeled and diced
  • water, to cover potatoes
  • 1/2 cup parmesan cheese
  • 1/8 cup milk
  • 3 tablespoons butter or 3 tablespoons margarine

Recipe

  • 1 pre-heat oven to 375 degrees.
  • 2 in a large pot or dutch oven, boil potatoes until tender. drain and add parmesan cheese, milk, and butter. mash, set aside.
  • 3 in the same pot, over medium heat, (because i hate washing lots of pots and pans. if you must you can do this in a separate pan), add ground beef, onion, salt, pepper, thyme and basil. brown beef and cook until onions start to become translucent. add carrot and corn, cook and stir until heated through. add tomato paste, 1 1/2 cans water, and worcestershire sauce and heat through.
  • 4 put in a 13x9 inch pan, (i line mine with heavy duty aluminum foil to save on cleanup), and bake for about 20 minutes.

Shepherdess' Pie

Ingredients

  • Servings: 4
  • 1 1/2 cups bechamel sauce (see note)
  • 1 medium onion, minced
  • 1 egg, beaten
  • 1/4 cup cracker crumb (smash crackers in a small plastic bag)
  • 1/4 cup fresh parsley, chopped (i like fresh best, but dried will work)
  • 1 teaspoon salt
  • 1 teaspoon thyme
  • 1/4 teaspoon ground red pepper
  • 1 teaspoon vinegar
  • 1 lb ground beef (or lamb)
  • 4 cups mashed potatoes
  • 1/2 cup monterey jack cheese, shredded (orig. recipe called for kefalotyri but i've never found that, any cheese will work, but jack or font)
  • 1 teaspoon paprika

Recipe

  • 1 start by making bechamel sauce: melt 1/4 cup butter, then whisk in 3 tablespoons flour; cook for a minute, then slowly stir in 1 1/2 cups warm milk (can microwave milk a minute beforehand to warm it). cook this, stirring constantly till it thickens and coats spoon. set aside till ready to use.
  • 2 combine 3/4 cup of bechamel sauce with onion, egg, cracker crumbs, parsley, salt, thyme, red pepper, and vinegar.
  • 3 add this sauce mixture to meat and toss with two forks to mix lightly (don't overwork meat) put this all into a casserole dish, level off top and make a slight indent with back of spoon (just like with meatloaf).
  • 4 bake at 350 degrees for about 30 minutes, occasionally using a spoon to remove fat that collects in the indentation.
  • 5 combine potatoes with remaining bechamel sauce.
  • 6 remove meat from oven, sprinkle with the cheese, top with potatoes. sprinkle with the paprika. bake an additional 20 minutes.

Sheri's Homemade Spaghetti Sauce

Ingredients

  • 16 quarts roma-type tomatoes, peeled, cored, and roughly chopped
  • 2 full heads of garlic
  • 4 large onions
  • 8 sweet peppers (green, yellow, red)
  • 1 cup brown sugar, loosely packed and heaping
  • 2 tablespoons canning salt
  • 1/4 cup lemon juice (bottled only)
  • 1/2 cup white vinegar
  • 1/2 cup olive oil
  • 3 tablespoons basil
  • 3 tablespoons oregano
  • 3 tablespoons parsley
  • 1 tablespoon rosemary
  • 12 bay leaves
  • 2 tablespoons whole allspice
  • 2 tablespoons fennel seeds
  • 2 teaspoons red pepper flakes

Recipe

  • 1 blanch, peel and core the tomatoes. chop them so they are in smallish pieces. place in roaster.
  • 2 peel garlic and place in a food processor. half and quarter the onions and toss them in with the garlic. process until finely chopped. pour in with tomatoes.
  • 3 seed and clean the peppers. cut in chunks and toss in the food processor. process until finely chopped. pour into tomatoes. stir up well.
  • 4 add remaining ingredients except the bay leaves, allspice and fennel. take these and divide into two cheese cloth sections. take each cheese cloth and tie it with spices enclosed. add to tomatoes.
  • 5 start roaster at about 300°f get it hot, stirring occasionally. let it cook for about 3 hours.
  • 6 turn cooker down to 200°f and let simmer either all day or overnight. (i let it go overnight, and when i came out of the bedroom, the house was filled with yumminess).
  • 7 once it reaches the consistency you like, i like mine thick, ladle hot sauce into clean, hot quart jars. wipe rim clean, place two part canning lids in place and tighten to finger tight.
  • 8 put hot jars into readied pressure canner, process according to processors directions for 25 minutes.

Sherbet Shake

Total Time: 10 mins Preparation Time: 10 mins

Ingredients

  • Servings: 4
  • 1 quart sherbet, any flavor (i use rainbow flavor)
  • 1/2 liter carbonated carbonated lemon-lime beverage (7 up is the best)

Recipe

  • 1 mix 1/2 quart of sherbet & 1/4 liter of soda together in a blender. repeat with the other half of the ingredients.
  • 2 serve chilled in a glass.

Sheri's Slow Cooker Beef Stew

Ingredients

  • Servings: 5
  • 3 large potatoes, peeled,diced
  • 1 cup sliced carrot
  • 1 1/2 lbs beef stew meat, cut up bite sized
  • 1/2 cup olive oil
  • 1/2 cup flour
  • 4 cups beef broth
  • 1 medium onion, grated
  • 1 (15 ounce) can corn, drained
  • 1 (4 ounce) can sliced mushrooms, drained
  • 1 tablespoon dried parsley
  • 1 teaspoon dried sage
  • 1/2 teaspoon dried marjoram
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper

Recipe

  • 1 place diced potatoes and sliced carrots in a large microwave safe bowl, cover and cook in microwave for six minutes until potatoes are partially cooked.
  • 2 heat oil in a large skillet.
  • 3 place flour in a gallon sized plastic bag and coat meat.
  • 4 brown meat in skillet.
  • 5 (remaining flour in bag will be used as thickener) put potatoes and meat in crock pot.
  • 6 add remaining ingredients.
  • 7 add flour from bag along with enough to make 1/3 of a cup of flour.
  • 8 stir well and let simmer on low for 4 hours.
  • 9 if not to desired thickness you may remove cover and turn to high, stir every so often.
  • 10 or add more flour or some cornstarch dissolved in a little water.

Sheran's Microwave Lasagna

Ingredients

  • Servings: 8
  • 1/2 lb ground beef
  • 1/2 lb italian sausage
  • 1 garlic clove, minced
  • 1 (1 ounce) package dry onion soup mix
  • 1 1/2 cups water
  • 1 (6 ounce) can tomato paste
  • 1 (8 ounce) can tomato sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon sugar
  • 1 teaspoon oregano
  • 1/2 teaspoon basil
  • 1/2 lb lasagna noodle, cooked
  • 1/2 lb mozzarella cheese, shredded
  • 1 lb cottage cheese or 1 lb ricotta cheese
  • parmesan cheese, grated, to taste

Recipe

  • 1 combine meat and garlic in 2 quart casserole dish and cook on full power in microwave for 3 to 4 minutes, stirring 1-2 times during cooking.
  • 2 drain meat. blend in ingredients through basil and cook covered on full power for 10 minutes, stirring halfway through.
  • 3 layer meat mixture, noodles, mozarella cheese and cottage cheese in 2 quart dish.
  • 4 repeat layers, ending with meat, then sprinkle generously with parmesan cheese.
  • 5 cover loosely with plastic wrap.
  • 6 cook on full power 12- 14 minutes, or until heated through.

Shepherd's Poy

Total Time: 1 hr 10 mins Preparation Time: 30 mins Cook Time: 40 mins

Ingredients

  • Servings: 6
  • 2 lbs lean ground beef
  • 1 cup diced onion
  • 1 cup diced carrot
  • 1 cup diced celery
  • 1 1/2 cups corn kernels
  • 4 cloves garlic, minced
  • salt and pepper
  • 1/2 teaspoon ground nutmeg
  • 8 fluid ounces low sodium beef broth
  • 2 tablespoons unsalted butter, mixed with
  • 2 tablespoons flour
  • 2 lbs potatoes, cooked and mashed
  • additional unsalted butter

Recipe

  • 1 brown the ground beef in a frying pan.
  • 2 add the onions, carrots, celery, garlic, salt, pepper and nutmeg.
  • 3 lower the heat and cook for about 10 minutes until the vegetables are wilted.
  • 4 add the beef broth and bring to a boil.
  • 5 stir in enough of the butter/flour roux to make thick gravy to bind the filling.
  • 6 pour into large shallow baking pan and cool.
  • 7 the filling should be about 1½ inches deep.
  • 8 cover the meat mixture in the pan with the corn and then top with the hot mashed potatoes.
  • 9 spread the potatoes evenly and brush the surface with butter.
  • 10 bake at 325°f for 35-40 minutes.
