Ingredients

- 2 lbs aubergines
- 1 garlic clove
- 1 tablespoon lemon juice
- 1 teaspoon cumin
- black pepper
Recipe
- 1 cut the aubergines in half length ways and place under a hot grill for about 20 minutes until the flesh is soft, alternatively bake in oven gas mark 7 for approximately 40 minutes
- 2 scoop out flesh and blend with all other ingredients season to taste.
