Shelly's Salsa & Lemon Chicken

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 2
  • 2 boneless chicken breasts
  • 2 cups minute rice
  • 1 cup salsa
  • 1 tablespoon lemon juice or 1/2 lemon, juice of
  • 1 teaspoon butter
  • 1 tablespoon parmesan cheese

Recipe

  • 1 put butter and lemon juice in a frying pan and simmer.
  • 2 place defrosted chicken breasts in the pan, cook until done.
  • 3 bring rice to a boil and set aside.
  • 4 heat salsa slightly in microwave or saucepan.
  • 5 put chicken on bed of rice and cover with salsa.
  • 6 sprinkle with parm and serve.
