Skip The Machine Peach Gelato

Ingredients

- 3 lbs peaches, peeled and pitted
- 1/4 cup sugar
- 1/2 cup yogurt or 1/2 cup mascarpone cheese
Recipe
- 1 cut peaches into very small pieces.
- 2 arrange peach pieces in a single layer on a rimmed cookie sheet and freeze solid, about 2 hours.
- 3 put frozen peach pieces in a food processor with the sugar and grind briefly.
- 4 add mascarpone or yogurt and pulse until mixture is smooth.
- 5 empty processor into a small container and freeze again, about 20 to 30 minutes.
- 6 if gelato freezes solid, process it briefly again before serving.
- 7 note: depending on the sweetness of the peaches, you may want to add more sugar.
