Skip The Machine Peach Gelato

Ingredients

  • Servings: 6
  • 3 lbs peaches, peeled and pitted
  • 1/4 cup sugar
  • 1/2 cup yogurt or 1/2 cup mascarpone cheese

Recipe

  • 1 cut peaches into very small pieces.
  • 2 arrange peach pieces in a single layer on a rimmed cookie sheet and freeze solid, about 2 hours.
  • 3 put frozen peach pieces in a food processor with the sugar and grind briefly.
  • 4 add mascarpone or yogurt and pulse until mixture is smooth.
  • 5 empty processor into a small container and freeze again, about 20 to 30 minutes.
  • 6 if gelato freezes solid, process it briefly again before serving.
  • 7 note: depending on the sweetness of the peaches, you may want to add more sugar.
