Surprise Pie

Ingredients
- 3 egg whites, room temperature
- 1/2 teaspoon baking powder
- 1 cup sugar
- 20 Ritz crackers, crushed (round butter flavored crackers)
- 1/2 cup walnuts, chopped
- 1 teaspoon vanilla
- 8 ounces Cool Whip
Recipe
- 1 Preheat oven to 300 degrees.
- 2 Beat egg whites until soft peaks form.
- 3 Add baking powder. Beat a few seconds.
- 4 Fold in alternately sugar, cracker crumbs and nuts.
- 5 Add vanilla mixing gently.
- 6 Pour into a buttered 8 or 9 inch pie plate.
- 7 Place in oven and reduce temperature to 250 degrees.
- 8 Bake 45 minutes.
- 9 Cool and place in fridge to chill.
- 10 Cover with Cool Whip and return to fridge for at least 2 hours before serving.
