Pumpkin Oat Sunflower Seed Muffins, Low-Fat

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • 1 1/4 cups oats
  • 3/4 cup whole wheat flour
  • 1/4 cup flax seed
  • 2/3 cup Splenda brown sugar blend
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon morton lite salt
  • 1 teaspoon vanilla
  • 2 1/2 cups pumpkin pie mix
  • 1/3 cup applesauce
  • 1/2 cup sunflower seeds

Recipe

  • 1 Preheat oven to 375F.
  • 2 Combine first 8 ingredients in large bowl.
  • 3 Use a muffin pan with medium size muffin cups, spray with cooking spray.
  • 4 Fill muffin cups 3/4 full.
  • 5 Bake for 20 - 25 minutes or until tops springs back when lightly touched.
