Ruby Red Jellies

Total Time: 4 hrs 20 mins Preparation Time: 20 mins Cook Time: 4 hrs

Ingredients

  • Servings: 4
  • 250 g hulled and halved strawberries
  • 1 tablespoon sugar
  • 1 (85 g) packet raspberry jelly
  • 1 tablespoon lemon juice or 1 passion fruit
  • 1 tablespoon grand marnier

Recipe

  • 1 ** note ~ use only half the quantity of water recommended on the jelly packet insructions.
  • 2 stir sugar into the strawberries and stand for 10 minutes.
  • 3 puree the strawberry mixture.
  • 4 make up the jelly with the water, (see note above) add lemon juice (or passionfruit) grand marnier and pureed strawberries.
  • 5 pour mixture into champagne glasses and chill for four hours or until set.
  • 6 jellies usually make about 4-6 depending on size of wine or champagne glasses used.
  • 7 you can top the jellies with whipped cream if desired.
