Simple One Pan Tuna Bake

Ingredients

- 1 1/2 lbs frozen potato wedges
- 11 ounces tuna packed in brine
- 1 red onion, sliced
- 4 tablespoons low-fat mayonnaise
- 4 tablespoons chives, chopped
- 3 ounces sharp cheddar cheese, shredded
- salt and pepper, to season
Recipe
- 1 heat the oven to 425°f.
- 2 place the potato wedges in an oven proof dish and bake for 15 minutes until they are crispy.
- 3 drain the tuna thoroughly and mix together with the red onion, mayonnaise and most of the chives. season with salt and pepper.
- 4 spoon the tuna mix over the wedges, combining it slightly.
- 5 top with the cheese and broil until the cheese has melted.
- 6 sprinkle over the rest of the chives and serve with a crisp green salad.
