's Summer Pasta

Ingredients
- Servings: 8
- 2 cups tomatoes, diced
- 1 cup corn kernel, fresh (or frozen)
- 1 cup cucumber, diced
- 1/2 cup green onion, chopped
- 1/4 cup yellow bell pepper, chopped finely
- 1/4 cup olive oil
- 2 tablespoons cilantro
- 3 tablespoons lime juice
- 2 garlic cloves, minced
- 1/2 teaspoon ground cumin
- 1 jalapeno, seeded and minced
- 1 (16 ounce) package tri-color spiral pasta, cooked
Recipe
- 1 combine all ingredients in a large pot.
- 2 bring to a simmer and allow to simmer for 2 hours, stirring occasionally.
- 3 salt and pepper to taste.
- 4 serve over cooked pasta.
- 5 serve hot or allow to cool and serve cold.
