's Summer Pasta

Total Time: 2 hrs 30 mins Preparation Time: 30 mins Cook Time: 2 hrs

Ingredients

  • Servings: 8
  • 2 cups tomatoes, diced
  • 1 cup corn kernel, fresh (or frozen)
  • 1 cup cucumber, diced
  • 1/2 cup green onion, chopped
  • 1/4 cup yellow bell pepper, chopped finely
  • 1/4 cup olive oil
  • 2 tablespoons cilantro
  • 3 tablespoons lime juice
  • 2 garlic cloves, minced
  • 1/2 teaspoon ground cumin
  • 1 jalapeno, seeded and minced
  • 1 (16 ounce) package tri-color spiral pasta, cooked

Recipe

  • 1 combine all ingredients in a large pot.
  • 2 bring to a simmer and allow to simmer for 2 hours, stirring occasionally.
  • 3 salt and pepper to taste.
  • 4 serve over cooked pasta.
  • 5 serve hot or allow to cool and serve cold.
