Seashells' Crock Pot Meatball Stew

Ingredients
- Servings: 6
- 1 lb lean ground beef
- 1 1/2 teaspoons salt
- 1/4 teaspoon pepper
- 4 potatoes, cut in 1-inch cubes
- 4 carrots, cut in chunks
- 1 onion, cut in chunks
- 1/2 cup catsup
- 1/2 cup water
- 1 1/2 tablespoons vinegar
- 1/2 teaspoon dried basil
Recipe
- 1 preheat oven to 350°f.
- 2 combine ground beef with 1 tbsp of salt and 1/4 tsp pepper and mix well.
- 3 shape into 1-inch meatballs.
- 4 bake in oven 15 minutes or until browned.
- 5 place the potatoes, carrots and onion into the crock pot.
- 6 top with meatballs.
- 7 combine catsup with vinegar, basil and remaining salt and pepper to taste.
- 8 pour over meatballs.
- 9 cover and cook on low 4 to 5 hours or till veggies are done.
