Seashells' Crock Pot Meatball Stew

Total Time: 5 hrs 20 mins Preparation Time: 20 mins Cook Time: 5 hrs

Ingredients

  • Servings: 6
  • 1 lb lean ground beef
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • 4 potatoes, cut in 1-inch cubes
  • 4 carrots, cut in chunks
  • 1 onion, cut in chunks
  • 1/2 cup catsup
  • 1/2 cup water
  • 1 1/2 tablespoons vinegar
  • 1/2 teaspoon dried basil

Recipe

  • 1 preheat oven to 350°f.
  • 2 combine ground beef with 1 tbsp of salt and 1/4 tsp pepper and mix well.
  • 3 shape into 1-inch meatballs.
  • 4 bake in oven 15 minutes or until browned.
  • 5 place the potatoes, carrots and onion into the crock pot.
  • 6 top with meatballs.
  • 7 combine catsup with vinegar, basil and remaining salt and pepper to taste.
  • 8 pour over meatballs.
  • 9 cover and cook on low 4 to 5 hours or till veggies are done.
