Skillet Chicken Fajitas

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 1 lb boneless skinless chicken breast (2 breasts)
  • 1/4 yellow pepper
  • 1/4 red pepper
  • 1/4 green pepper
  • 1 medium onion
  • 2 tablespoons butter or 2 tablespoons margarine
  • 2 medium limes
  • salt and pepper, to taste
  • garlic powder, to taste
  • onion powder, to taste
  • cilantro, to taste
  • dried chipotle chile, to taste
  • chili powder, to taste
  • chili powder, to taste
  • cumin (to taste)
  • 6 flour tortillas

Recipe

  • 1 melt butter in a cast iron skillet on medium heat.
  • 2 slice chicken breast into 1/2" strips and throw in the skillet; add the juice of one lime.
  • 3 season to taste.
  • 4 slice veggies into thin strips and throw into the skillet.
  • 5 stir everything and re-season if desired. add second lime's juice.
  • 6 cook for three to five minutes, then cover and put on low heat.
  • 7 heat flour tortillas and put chicken and veggies inside for a fabulous taco!
