Ingredients

- 1 large red onion
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 3 tablespoons marsala wine
Recipe
- 1 slice the onion very thin and evenly.
- 2 a mandolin is perfect for this.
- 3 sweat the onions in olive oil on low till very soft.
- 4 add the red wine vinegar and marsala.
- 5 simmer till all the liquid has reduced.
