tofu veggie salad

ingredients

  • servings: 8
  • 1 pound firm tofu, crumbled
  • 2 carrots, grated
  • 1 cucumber, cleaned and diced
  • 6 green onions, chopped
  • 2 cups fresh peas
  • 1 (2 ounce) can chopped black olives
  • 1/4 cup teriyaki sauce
  • 2 tablespoons dijon-style prepared mustard

recipe

  • in a medium size mixing bowl combine tofu, carrots, cucumber, green onions, assorted vegetables, black olives, teriyaki sauce and dijon mustard. mix well.
