- 1 1/8 cups butter
- 1 1/3 cups white sugar
- 4 eggs
- 2 1/2 teaspoons grated lemon zest
- 3 1/2 cups all-purpose flour
- 4 teaspoons baking powder
- 1 1/2 cups raisins

preparation time: 15 mins cook time: 50 mins ready time: 1 hr 35 mins
- soak raisins in for 1/2 hour.
- preheat oven to 350 degrees f (175 degrees c). grease a 10 inch, round pan.
- cream butter with sugar. add 4 eggs, lemon zest, flour, and baking powder. mix well . add and raisins.
- bake for about 50 minutes. cut into wedges to serve.
