raisin pudding

ingredients

  • servings: 6
  • 1 1/8 cups butter
  • 1 1/3 cups white sugar
  • 4 eggs
  • 2 1/2 teaspoons grated lemon zest
  • 3 1/2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 1/2 cups raisins
  • 1/2 cup

    preparation time: 15 mins cook time: 50 mins ready time: 1 hr 35 mins

  • soak raisins in for 1/2 hour.
  • preheat oven to 350 degrees f (175 degrees c). grease a 10 inch, round pan.
  • cream butter with sugar. add 4 eggs, lemon zest, flour, and baking powder. mix well . add and raisins.
  • bake for about 50 minutes. cut into wedges to serve.
