kale salad with pineapple dressing

ingredients

  • servings: 10
  • 2 bunches kale, stems removed and leaves finely shredded
  • 1 (15 ounce) can crushed pineapple, undrained
  • 1/3 cup lemon juice
  • 1/4 cup sunflower seed oil
  • 1/2 cup sunflower seeds, or to taste (optional)

  • place shredded kale in a large bowl. mix pineapple, lemon juice, and sunflower oil together in a bowl; pour over kale and toss. sprinkle sunflower seeds over salad.
