Ingredients
- Servings: 8
- 3 cups frozen peas
- 3 cups vegetable broth, heated to boiling
- 1 scallion, torn in half
- 8 ounces fresh mozzarella cheese
Recipe
- 1 add peas and scallion to vegetable broth. return to the boil and cook until peas are tender, about 10 minutes. discard scallion.
- 2 snip or dice mozzarella into small bits. add to blender. add peas and broth to blender. remove center of lid, cover with dishtowel, and until smooth.
