- 1 bunch beet
- 1/4 cup vinegar
- 1 tablespoon sugar
- 1 tablespoon olive oil
- 1/2 teaspoon dry mustard
- salt & pepper
Recipe
- 1 while beets are cooking (steam or roast), combine remaining ingredients in a ziplock bag.
- 2 cool, peel, and slice beets. add to vinaigrette. marinate at least 1/2 hour at room temperature. store any leftovers in fridge.
