Seared Sea Scallops With Tropical Salsa

Ingredients

- 1/2 cup pineapple, diced
- 1/2 cup mango, diced
- 1/2 cup cucumber, diced
- 1/2 cup red bell pepper, seeded and diced
- 3 tablespoons cilantro
- 4 teaspoons fresh lime juice
- 1 jalapeno, seeded, minced
- salt
- pepper
- 20 sea scallops
Recipe
- 1 in a bowl combine all the ingredients except for the salt, pepper and scallops.
- 2 toss well. season with salt and pepper and set aside.
- 3 heat a large nonstick frying pan over medium-high heat.
- 4 coat the pan with cooking spray.
- 5 season the scallops with salt and pepper.
- 6 add half the scallops and sear, turning once, about 2 minutes. remove and keep warm.
- 7 repeat with the remaining half of the scallops.
- 8 top with the salsa and serve.
