Seared Scallops In Caper Brown Butter

Ingredients

- 1 lb large scallop, trimmed of any tendons
- 3 tablespoons butter
- 2 tablespoons capers
Recipe
- 1 season the scallops lightly with pepper.
- 2 heat 1 tablespoon of the butter in a large nonstick skillet over medium-high heat until foamy.
- 3 add the scallops to the hot butter and cook, turning, until lightly browned, about 2 minutes per side.
- 4 add the capers and cook about 30 seconds.
- 5 swirl in the remaining 2 tablespoons of butter and remove from heat.
- 6 salt & pepper to taste.
- 7 serve the scallops sauced with the caper butter.
- 8 lemon wedges make a delicious garnish if you have them.
