Ingredients
- Servings: 2
- 8 ounces pasta (any shape you like)
- 2 -3 tablespoons unsalted butter
- 1/2 cup chicken stock
- 2 tomatoes (chopped)
- 3 tablespoons capers
- 3 garlic cloves (chopped)
- 4 green onions (chopped)
- 1 teaspoon red pepper flakes
- 1 lemon, juice of
- 1/2 cup fresh basil (chopped)
- 1 cup macadamia nuts (chopped)
- 1/2 lb bacon (cooked, drained & chopped)
- 1/2 cup flaked coconut (toasted)
- 1/2 cup parmesan cheese (or to taste)
Recipe
- 1 cook pasta according to package.
- 2 meanwhile add butter and chicken stock to pan.
- 3 saute tomatoes, capers, garlic, green onions and red pepper flakes till cooked and thickened a bit.
- 4 add this mixture to pasta along with fresh lemon juice, fresh basil, nuts, cooked bacon, toasted coconut and freshly grated parmesan cheese.
