Sky's The Limit Pasta

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 2
  • 8 ounces pasta (any shape you like)
  • 2 -3 tablespoons unsalted butter
  • 1/2 cup chicken stock
  • 2 tomatoes (chopped)
  • 3 tablespoons capers
  • 3 garlic cloves (chopped)
  • 4 green onions (chopped)
  • 1 teaspoon red pepper flakes
  • 1 lemon, juice of
  • 1/2 cup fresh basil (chopped)
  • 1 cup macadamia nuts (chopped)
  • 1/2 lb bacon (cooked, drained & chopped)
  • 1/2 cup flaked coconut (toasted)
  • 1/2 cup parmesan cheese (or to taste)

Recipe

  • 1 cook pasta according to package.
  • 2 meanwhile add butter and chicken stock to pan.
  • 3 saute tomatoes, capers, garlic, green onions and red pepper flakes till cooked and thickened a bit.
  • 4 add this mixture to pasta along with fresh lemon juice, fresh basil, nuts, cooked bacon, toasted coconut and freshly grated parmesan cheese.
  • 5 enjoy!
