Skordomakarona - Santorini Spaghetti

Ingredients

  • Servings: 4
  • 1/2 kg spaghetti
  • 1 plate fresh tomato, slightly cut
  • olive oil
  • 3 -4 garlic cloves
  • cinnamon
  • pepper
  • sugar
  • salt
  • some rosemary

Recipe

  • 1 first boil the spaghetti and then strain them, put some olive oil and keep them warm.
  • 2 in a small shallow pot, warm some olive oil and saute a little the garlic. then put in the pot the tomatoes,and the rosemary and add some sugar and salt.
  • 3 stir regularly until the most of the tomato liquid evaporates.
  • 4 put some cinnamon and pepper. in a while the sauce is ready and it can be poured on the spaghetti.
  • 5 grated cheese is optional.
