Skordomakarona - Santorini Spaghetti

Ingredients
- Servings: 4
- 1/2 kg spaghetti
- 1 plate fresh tomato, slightly cut
- olive oil
- 3 -4 garlic cloves
- cinnamon
- pepper
- sugar
- salt
- some rosemary
Recipe
- 1 first boil the spaghetti and then strain them, put some olive oil and keep them warm.
- 2 in a small shallow pot, warm some olive oil and saute a little the garlic. then put in the pot the tomatoes,and the rosemary and add some sugar and salt.
- 3 stir regularly until the most of the tomato liquid evaporates.
- 4 put some cinnamon and pepper. in a while the sauce is ready and it can be poured on the spaghetti.
- 5 grated cheese is optional.
