Ingredients

- 2 lbs potatoes
- 5 garlic cloves (to taste)
- 1 tablespoon vinegar, greek wine vinegar preferred
- 5 tablespoons olive oil
- salt, to taste
Recipe
- 1 peel potatoes.
- 2 boil potatoes until soft, then strain.
- 3 chop garilc.
- 4 with flat side of a knife, work garlic into salt until a paste forms.
- 5 place potatoes and garlic paste in a food processor.
- 6 pulse until mixture becomes a pulp.
- 7 add vinegar.
- 8 add olive oil slowly until the mixture becomes unified.
