Skinny Skillet Lasagna

Ingredients

- 8 ounces italian turkey sausage
- 1/2 cup chopped onion (1 medium)
- 2 cups spaghetti sauce
- 1 cup water
- 2 cups lasagna noodles
- 1 1/2 cups zucchini
- 1/2 cup fat-free ricotta cheese
- 2 tablespoons parmesan cheese or 2 tablespoons romano cheese
- 1 tablespoon fresh parsley
- 1/2 cup reduced-fat mozzarella cheese
Recipe
- 1 brown meat and onion in large skillet. drain off excess fat.
- 2 add spaghetti sauce and water. bring to boil.
- 3 add zucchini and noodles. return to boil.
- 4 reduce heat, cover, and simmer for 12 minutes until pasta is tender.
- 5 combine ricotta, parmesan cheese, and parsley in a small bowl.
- 6 drop the cheese mixture into the skillet in five or six mounds. top each mound with mozzarella. cover for 5 to 6 minutes, or until heated through.
- 7 let stand ten minutes before serving.
