Skinny Skillet Lasagna

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 8 ounces italian turkey sausage
  • 1/2 cup chopped onion (1 medium)
  • 2 cups spaghetti sauce
  • 1 cup water
  • 2 cups lasagna noodles
  • 1 1/2 cups zucchini
  • 1/2 cup fat-free ricotta cheese
  • 2 tablespoons parmesan cheese or 2 tablespoons romano cheese
  • 1 tablespoon fresh parsley
  • 1/2 cup reduced-fat mozzarella cheese

Recipe

  • 1 brown meat and onion in large skillet. drain off excess fat.
  • 2 add spaghetti sauce and water. bring to boil.
  • 3 add zucchini and noodles. return to boil.
  • 4 reduce heat, cover, and simmer for 12 minutes until pasta is tender.
  • 5 combine ricotta, parmesan cheese, and parsley in a small bowl.
  • 6 drop the cheese mixture into the skillet in five or six mounds. top each mound with mozzarella. cover for 5 to 6 minutes, or until heated through.
  • 7 let stand ten minutes before serving.
